21.01.2022 Yesterday was Pastrami making day and a chance to further test out our Snake pit made by Mark Salmi. As Chris Tyrrell recently confirmed, the Weber kettle held beautifully at 250F for hours on end before rising slightly to 300F after about 4 hours. Easy to keep the temp down by closing down vents. Next cook will be with Firebrand BBQ briquettes where we'd expect double the cook time. Impressive stuff.
