12.01.2022 Pavlova is the perfect dessert, crisp on the outside and marshmallow soft inside, often on show for many Aussie family gatherings. But if you’ve ever had a meringue fail, you'll know the frustration mixture that splits before it’s even in the oven, weepy meringue, or a cracked shell that looks a little sad. We've got some top tips for epic pavlova every time!... Fresh eggs Fresh eggs have a thicker white, which means lovely stable foam forms when you whisk them. Squeaky clean tools Any trace of fat or oil could affect how well your egg whites whip. Ensure your bowl and beaters are squeaky clean, and avoid getting any egg yolk in with your whites. Kitchen queen Martha Stewart suggests separating your eggs while they are cold, then letting the eggs reach room temperature before whisking. Thanks Martha! Hinder humidity Meringues are full of sugar, so if the humidity is high, they’ll absorb moisture from the air, which can make your meringue weep or go soft and sticky after baking. No one likes a sad pav, so you can add a touch of arrowroot powder if in doubt Arrowroot and vinegar for back up A lot of pavlova recipes add cornflour/arrrowroot powder and an acid, often vinegar but sometimes lemon juice or cram of tartar. Adding starch and acid creates a more stable meringue and helps prevent a pav fail. Superfine, well dissolved caster sugar Fully dissolved sugar is one of the keys to perfect pav. Never go full sugar rush! Make sure the egg whites have been whisked on a medium speed to soft peaks before you start adding sugar. Add in a table spoon at a time, it’s ready when it’s thick, glossy, smooth and there are no more sugar granules. Pile high for a squishy middle Different strokes for different folks. If you LOVE the crunchy outside and marshmallowy centre of a pav, pile the mix nice and high. Prefer it firm all he way through, go low. Cool completely in oven Don't poke the pav! Leaving it well alone can help avoid a complete meltdown. You can prop the oven door ajar until its come to complete room temperature. Dress just before serving Storing in an airtight tightener after completely cooled can help preserve the pav in a good mood! No weeping! Then simply dress right before it's ready to make its debut! 01.01.2022 SUPERFOOD CHRISTMAS CAKE BLISS BALLS! Melt in your mouth chocolate coated bliss balls by @ceresorganics! Makes 12 med sized bliss balls... 2 tbsp LSA 2 cups Almond Meal 1/4 cup Raisins 1/4 cup dried cherries 1/4 cup goji berries Zest of 1 orange 2 tsp mixed spice 1 tsp vanilla 1 tbsp brandy (optional) 2 tbsp Maple Syrup Dark chocolate, melted to coat 1. In a bowl place the cherries, raisins, goji berries and orange zest with the brandy, maple syrup, vanilla and mixed spice. Stir to coat and allow to sit for at least an hour. 2. Place the mixture in a food processor, add the almond meal and whiz until combined. If the mixture is too wet, add a little more almond meal. 3. Roll into balls, and place in the fridge to set for at least 1 hour. 4. When you are ready, coat in the melted chocolate and place back in fridge until you are ready to enjoy. They will last up to 2 weeks in the fridge or 2 months in the freezer.
