22.01.2022 Having a matcha moment this week and these midweek snacks are the perfect way to enjoy it. Theese green bites are not only good for you, they're also super delicious.. . Recipe: 100g dates 10 drops of lemon essential oil (or zest from 1/2 lemon)... 100g cashew nuts 1 avocado 1 tsp matcha 75g creamy coconut butter 200g oats 3-4 tbs coconut flour Pinch of himalayan salt . How to: Blend all of the ingredients (except for the coconut flour) in a high speed blender until you get a creamy consistency. Pour the cream over in a bowl and add the coconut flour 1 tbs at a time and blend in. Roll in to balls and roll in some topping like sesame seeds. Store in the fridge. And most importantly, enjoy!! . 18.01.2022 Hump day dinner sorted! Creamy pesto pasta bake by @deliciouslyella This is the perfect dish to make when you're looking for something warm and comforting The creamy cashew and basil pesto coats the pasta, courgette and peas, which is then baked in the oven with a crunchy breadcrumb topping Recipe below and on her link in bio. Don't forget to visit her profile for more excellent recipes! Serves 4... 400g pasta 2 courgettes 100g frozen peas 2 slices of sourdough bread 2 tablespoons of nutritional yeast Pinch of salt Olive oil For the pesto sauce 100g cashews 125ml almond milk 1 tablespoon of nutritional yeast Juice of 1 lemon 3 roasted garlic cloves 1 tablespoon of Dijon mustard Large handful of fresh basil Pinch of salt Preheat the oven to 200C, grill setting. Cook the pasta according to the instructions on the pack. Once cooked, drain and pour back into the pan. Very thinly slice the courgettes into round pieces. Mix through the pasta, along with the frozen peas. Make the topping by placing the bread, nutritional yeast, a pinch of salt and 1 tablespoon of olive oil into a food processor and pulsing a few times until the mixture resembles breadcrumbs. Spoon into a bowl and leave to one side until needed. Make the pesto sauce by placing all of the ingredients, apart from the basil, into a powerful food processor and blending until smooth. Once smooth, add the basil and blitz a few more times until the mixture turns green but also has some chunky bits of herbs in. Pour the sauce into the pasta pan and mix well until all of the pasta is coated in the sauce. Spoon the pasta into a baking dish and top with the breadcrumb mixture. Want to experiment with Lemon Myrtle? These Lemon Myrtle + Ginger Cookies @byrosie_ look amazing ... Buy as little or as much as you need at The Source, Vic Park Prep: 5 mins Bake: 15 mins 1.5 cups almond meal 4 tbsp coconut oil 3 tbsp raw local honey 1.5 tsp ginger powder 14 cup crystallised ginger, finely chopped 2 tsp lemon myrtle 1 large lemon zested pinch of salt Preheat oven to 170c (fan-forced) In a mixing bowl add all ingredients and mix until all combined cookie dough style mixture. Use a tbsp spoon to scoop mixture up and roll into a ball then place onto lined baking tray. Repeat until finished. Gently press top of each cookie with fork. Place in oven for 14-16m (dependent on how well your oven works) until golden brown. Leave to completely cool on a wire rack, as will be very soft when straight out of oven. Recipe + pic @byrosie_

07.01.2022 These Raw Chocolate Mousse Ice Cream bars are DELICIOUS! Easy to make and a healthy ice cream alternative. Recipe and Image / Sabrina from @rawspirations INGREDIENTS... Base 1 cup activated almonds insecticide free 2 Tbsp raw organic cacao powder 1 cup pitted dates 1/2 cup organic coconut flakes 1/2 tsp ground cinnamon a pinch fine Himalayan salt Filling 1 small ripe spotty banana, 1 small/medium ripe Hass avocado 1-2 Tbsp coconut milk or coconut cream 2 Tbsp raw organic cacao powder 1/4 cup organic maple syrup (add more if you prefer sweeter) few drops vanilla essence or organic vanilla bean powder tsp organic raw coconut oil 1 Tbsp organic lucuma powder (optional) Base: Place all base ingredients in food processor and blitz until sticky. Press into a rectangular springform pan or flan tin that has a removable base. Filling: Blend in a high-speed blender until very smooth and creamy. Pour over base and freeze for a few hours to harden. Remove from freezer and top with 80g of your favourite melted down raw vegan chocolate. Return to freezer for a further 20-30mins.
