This week has been a very exciting week for him delivery his first harvest to some awesome local cafes who are just as excited to support locally grown food! 17.01.2022 Who else wants to add these to their Christmas menu! By far, these are the most homely and wholesome potatoes to grace the Christmas dinner table. ... INGREDIENTS 1.5kg - 2kg every day medium potatoes, peeled and halved 200g butter or ghee 3 tablespoons olive oil Sea salt and freshly ground black pepper, to season cup polenta 10g rosemary 100g grated parmesan INSTRUCTIONS For the perfect roast potatoes, you have to boil them first. Add your halved peeled potatoes to a large shallow casserole, cover in cold water and add a generous pinch of salt. Let them come to the boil with the lid on and simmer for 15 20 minutes until a knife goes through them easily but not so they fall apart. Preheat your oven to 200C (180C Fan Forced). Drain your potatoes and in the same pot while its still hot add half of your butter and olive oil, and season well as it starts to melt together add your potatoes back to the casserole and close the lid and jiggle them about to push against each other and sides of the pot creating rough edges to the potatoes and coating in the butter and seasoning at the same time. Add rosemary and remaining butter, season again, sprinkle in the polenta to coat and roast without the lid for 40 50 minutes tossing every now and then for an even crispy potato edge. 12.01.2022 A repost via @ameliafreer, check out this amazing Spiced Nut Recipe! ‘If you are thinking of making some gifts this Christmas, how about these spiced nuts? They are easy peasy to make, have some nutritional benefits and go deliciously with a glass of ice-cold fizz. A roasting fire and a chat with a friend (on zoom ) ask works. But they would make a very sweet present if you pop them in a Kilmer jar and add a festive ribbon. Here is the recipe: INGREDIENTS 100g cashews*... 100g whole almonds* 100g pumpkin seeds* 100g pecans* 3 tbsp olive oil 1 tbsp honey 1 tsp salt 1 tsp cumin 1 tsp smoked paprika 1 tsp orange zest *or substitute all the above nuts for 400g mixed nuts STEP-BY-STEP Preheat the oven to 160C. Mix all the ingredients together in a bowl until the nuts and seeds are well coated. Scatter the nuts onto a large, lined baking sheet. Roast for 7 minutes (set a timer!) and then mix, before roasting for a further 7 minutes. Remove, add a good grind of black pepper and allow to cool completely before storing in an air-tight container.’ You can find all of these ingredients minus the orange here at The Source Wagga! Here’s some Sunday baking inspiration for you from @morganhipworth Biscuit Recipe 230g butter 170g brown sugar... 100g caster sugar 2 eggs 470g flour 20g corn flour 7g baking soda 20g cocoa powder Chocolate Buttercream: 115g butter 1 cup icing sugar 1tbsp cocoa powder Chocolate Topping: 200g chocolate 1tbsp coconut oil Biscuit Method Cream butter & sugars, add eggs mix until smooth, add dry ingredients. Rest in fridge for 30 mins. Roll out into rectangles and bake at 180C for 10 mins Allow to cool Buttercream method: Whip all ingredients together until smooth Topping Method: Melt chocolate & coconut oil together until smooth To assemble: Sandwich together 2 biscuits with buttercream and spoon over chocolate topping mixture and allow to set Incredible recipe and video by @morganhipworth via @thesourceballarat Tag a friend who'd love this!
