25.01.2022 I love Sunday lunch when I have lots of lovely produce from the markets. Baked beetroot with haloumi, orange & our dukkah. Drizzled with a delicious dressing made with honey from our friends Ange & Phill at Mount Kilcoy Honey mixed with a little balsamic vinegar, lemon juice & olive oil and served with a crunchy loaf of sourdough fresh from the oven.



25.01.2022 Our featured spice blend for the week is our Sri Lankan Blend. The recipe that we are enjoying at the moment is an eggplant, spinach and tomato based full-bodied curry that will make for an easy, quick and healthy mid week dinner. This particular recipe is vegan but is just as delicious with your choice of meat and is lovely served with rice and naan bread or pappadam. 24.01.2022 Chai Spiced Apple Tea Cake: we made this one last weekend for morning tea with friends. We wanted to do something a little different, but quickly and with what we had on hand. It turned out fabulously! Just a tablespoon of chai blend mixed with the apple topping added a pleasantly mild, warm glow of spice that stayed with you. A list of synonyms for spicy from the Collins English Thesaurus might give you a clue, and a hint that our relationship with these unassuming plants bearing their amazing health-giving gifts is more complicated than you might think a fascinating subject well return to in future posts: Aromatic, flavoursome, hot, piquant, pungent, savoury, seasoned, tangy, improper, indecorous, indelicate, off-colour, ribald, risqué, scandalous, sensational, suggestive, titillating, unseemly. Have a spicy day (but not too spicy, youve got a reputation to uphold!)

23.01.2022 Heres a great way to transform your quick and easy scrambled eggs on toast. Just keep some feta cheese in the fridge and some Zaatar Blend from The Spice Republic on the shelf to add some tasty zest to your morning routine or easy Sunday night dinner. No tomato sauce needed! 1 tbs olive oil 4 free range eggs 25g feta... 2 slices bread (I like grained sourdough) Heat oil in frypan to medium heat. Lightly whisk eggs and add to pan. Add feta to eggs halfway through cooking. Cook eggs until glossy and just set and sprinkle well with Zaatar. Serve on toast. Add seasoning to your taste. They make their range of beautiful organic mueslis together by hand at their kitchen in Murwillumbah, and Nikki makes the trek down to the Powerhouse every 2nd & 4th Saturday so her merry band of loyal customers can come to chat and stock up. In the kitchen this morning making our new Mediterranean Seed Blend, with all the goodness of pumpkin, sunflower, hemp, chia, sesame, our very own Greek Blend & a little olive oil to bring it all together. In medieval times roses and rosewater were increasingly used medicinally, their aroma thought to combat the corrupt airs causing plagues that terrified Europe (Elizabeth I wore gloves of Spanish leather perfumed with rosewater whenever she was exposed to public spaces). In the 20th ...Century roses became valued as an important source of vitamin C, and rose hips were widely distributed during WWII when imports of citrus fruits were limited. 13.01.2022 Capsaicin, an active component of chilli peppers, protects the fruit from disease, and studies suggest it may extend its protective properties to humans. Rebecca Katz, Senior Chef at the Commonweal Cancer Help Program in California, notes in her book The Cancer Fighting Kitchen that capsaicin has shown promising results in the prevention of several types of cancer, and recommends cayenne pepper in her list of Cancer-Fighting Ingredients, along with chocolate, cinnamon & nutmeg. 04.01.2022 The history of most spices is dominated by their journey to Europe from far flung locations, but cumin is one that travelled in the other direction. Native to the Middle East, cumin was a household name in ancient Greece, and could often be found in its own container on the table much like salt and pepper today. It was widely grown throughout Europe in the Middle Ages and used to flavour bread, cheese and even beer! In the late Middle Ages it fell out of favour perhaps it ...lacked the romance of other spices like cloves and cinnamon which came from mysterious exotic locations but cumin lingered long enough in Spain for it to take root in Mexican cooking, where it plays an important role as an earthy balance to the rich, sharp taste of chilli, as it does in our Mexican Spice Blend. 03.01.2022 This week we're featuring our bestselling dukkah, made with fresh Australian grown macadamias. For thousands of years macadamia nuts have been prized as a delicacy by indigenous Australians, who collected the nuts which fell from trees that grew in the rainforests on the wet slopes of the Great Dividing Range, trading them between tribes and presenting them as ceremonial gifts at inter-tribal corroborees. The nuts were processed using a large stone with a special indentation ...to hold the nut, which was then struck by a larger hammer stone delivering an even force and minimising the damage to the kernel. Anyone can see the problem: for millennia, dukkah has been made in the Middle East without macadamia nuts, whilst in Australia macadamia nuts have been harvested without the recipe for dukkah.
