08.01.2022 Quandong, aka native peach, is one of the best know bush tucker and considered a superfood (protein, antioxidants, magnesium, calcium, iron, zinc, vitamins C & E). It is a small red fruit, about 2cm, which has a large seed in centre. Quandong grow through arid areas in Australia and are one of few drought tolerant fruit trees. The raw fruit is sweet and tangy, a flavour mix of peach meets apricot and can be juiced or stewed (jam, chutney and pie filling). Indigenous Australi...ans used kernels for their antibacterial properties by making a paste to alleviate tooth pain and heal skin ailments. To give yourself a toothache you need... 1kg quandong, chopped 1kg castor sugar 100ml water Place into a large saucepan over a medium heat and stir constantly until it comes to a boil. Lower heat and simmer gently until setting consistency (~45 mins). To test: drop 1 tsp of mix onto a plate, cool fully and when you poke it, it will wrinkle. Pour into sterilised jars and seal immediately. Keep at room temperature for ~a year, refrigerating once opened. This is great to entertain the #kids and you can pop some in the freezer for the busy school term.
