And for quite a while as I go on maternity leave A huge thank you to each and everyone of you, for believing in my dream and supporting me along this crazy journey! 21.01.2022 Happy birthday to meeeee! I didn’t make it, or decorate it. But I can’t not share Nicaea said to me the other day mum are you a baker? Is that because you make cakes? I want to make cakes when I’m bigger! Cake thanks to @woolworths_au vegan choc mud cake, and decorating thanks to Nicaea (yep all on her own, don’t look too closely). . Honestly having the best birthday! I think it’s because I’ve recently adjusted my expectations and no longer have any love for material things it’s incredibly liberating! Thank you for alllllll the love my social media friends

16.01.2022 Save this post I’ve been asked a number of times for a vegan buttercream recipe. I have shared my swiss meringue buttercream recipe before so I thought I’d share my super simple American style buttercream (vegan of course!). 500g copha (vegetable shortening, from Coles or Woolworths, it’s vegan). Cubed and at room temp! 500g buttery nuttelex... 1kg sifted icing mixture 1-2 tbsp water 2 tbsp vanilla In the mixing bowl of a stand mixer (you can use a hand beater, you’ll just be standing there for a while ) beat the nuttelex until fluffy. Slowly add in your copha, a few cubes at a time, beating well in between. Once all the copha is incorporated (with no lumps) add half the icing mixture. Beat on low until it is absorbed, then on high until fluffy. Repeat with the rest of the icing mixture, this time add the vanilla and 1 tbsp of water. If the buttercream seems too thick add the other tbsp of water, you want a nice fluffy consistency. Recipe notes: Don’t attempt to make this recipe with just nuttelex (or just copha), you need both for flavour and texture. You can flavour the buttercream! If you use a wet ingredient (such as vegan Nutella or peanut butter), don’t add any water until after, if at all. If you use a dry ingredient (such as cocoa), you’ll need to add more water.

15.01.2022 Just a little reminder that I am currently on maternity leave ONE BOWL VEGAN CUPCAKES to help you cope with my absence 1 1/2 cups SR flour 1 cup castor sugar 1 cup @originalbonsoy ... 1 tbsp apple cider vinegar 1/2 cup veg oil 1 tbsp vanilla Preheat your oven to 170* and line your cupcake tray. Combine the bonsoy and the apple cider vinegar in a medium mixing bowl. Let it sit for a few minutes to thicken. Add the oil and vanilla, give it a little whisk. Sift in the flour, and add the sugar. Fold together. Be careful not to over mix, a few little lumps is ok Divide between 12 cupcake patties and bake for 12-15 minutes (or until slightly golden on top and baked through, every oven is different). Allow the cupcakes too cool completely before you decorate them See more

05.01.2022 Such a dream to make this beautiful wedding cake! And another a few weeks later, just like it, just because. And I’ll make another at Christmas too Because apparently it’s was delicious and also - vegans in business supporting vegans in business. The stuff that makes this community work . It’s can be really hard polarising yourself in the market. I don’t talking about it often because it doesn’t bother me (believe me, you don’t make cake for a living because you want ...to be rich), but I see others struggling and getting criticised and that really bothers me. . Believe me, I wholeheartedly agree with supporting businesses that have vegan options! And do so myself regularly.
