25.01.2022 How INCREDIBLE does this homemade granola by @soulfulveganfood look using our Creme Fraiche ... !? It is a complete, perfectly balanced, flavour explosion of comforting warm goodness . . Recipe below for you to make at home and make sure you share your pictures of making this!! .... . Ingredients (serves 4): . 1-2 jars TVD ‘Creme Fraiche’ 2 cups oats 1 cups coconut flakes 1/2 cup sultanas 1/3 cup cranberries 1 cup mixed nuts 1 cups pepitas, sesame and flaxseeds 1 tbsp cinnamon 1 cup coconut oil 1 tspn salt 4 tbsp maple syrup 1 tspn vanilla essence 3 apples, chopped 1 punnet raspberries Handful blackberries 6 strawberries 4 passionfruit 2 lemons zest and juice . Method: . In a blender or food processor blitz nuts until crumbly with some chunks and set aside in a bowl. Blitz the oats and coconut flakes into a chunky crumble. . In a pan melt coconut oil, then add the nut and oat mixtures, seeds, 2 tspn cinnamon and 1 tbsp maple syrup and stir until lightly toasted. Remove from heat and spread on a lined baking tray . Bake at 150C until golden brown, stirring every 4-5 mins to ensure it doesn’t burn . In a bowl add TVD yoghurt, raspberries, lemon zest and juice, passionfruit pulp, vanilla and 1 tbsp maple syrup, stir to combine . Using the same pan as before, add chopped apples, 2 tspn cinnamon and 1 tbsp maple syrup, and cook on low for around 10 mins until soft and fragrant . When granola is ready, remove from oven and allow to cool before transferring to an airtight container for storage . To serve, add the yoghurt mix, granola and stewed apples to a bowl. 19.01.2022 This Daddy can cook! . . This amazing, and simple, recipe for vegan smoked salmon from @that_vegan_dad has got us buying up alllllll the bagels for dinner .... . INGREDIENTS: . 2 medium sized carrots 3 tbsp olive oil 1 tbsp liquid smoke 1 tbsp lemon juice 1 tsp salt 1 tsp pepper Sprinkle of dill Bagels 1 Dill Chevre from @thevegandairy . . METHOD: . Preheat oven to 180c. Peel 2 medium sized carrots to replicate salmon slices. Steam for 5 minutes. Add steamed carrots to oven dish with olive oil, liquid smoke, lemon juice, salt, pepper and dill. Mix to combine and place in the oven for 15 minutes. Cool for at least 10 minutes before serving. .. Once cooled spread Dill Chevre on the bottom side of your bagel, arrange vegan salmon on top, and place top side of your bagel on top. EAT IMMEDIATELY!! 16.01.2022 Need some yuuuuuum meal inspo? Try this delish baked tofu with our melty Hemp Smoked Mozzarella . . Ingredients: 450g Firm Tofu... small to medium onion sliced into half rings -1 cup fresh shredded mozzarella cheese 1 can of diced tomatoes or 4-6 chopped tomatoes 2 tablespoons fresh chopped parsley or basil, to garnish . Sauce / Marinade: 2 tablespoons olive oil 1/2 teaspoon dried oregano 1/2 tsp of chopped fresh rosemary leaves 1 teaspoon salt 1/4 tbsp balsamic vinegar 1-2 tsp coconut sugar cracked black pepper, to taste 5-6 cloves tablespoons minced garlic . Method: Cut tofu into large pieces (or your preferred size / shape) and place in a baking tray Shake together in a jar the balsamic vinegar, sugar, garlic, olive oil, salt, chopped rosemary leaves, and dried oregano Pour the marinade over the tofu and rub over the tofu. Arrange the red onion around the in the dish and marinate for 30 mins to an hour. Preheat oven to 220C | 430F. Pour the diced tomato’s over the marinated tofu and spread evenly. It will all mix in while it bakes. Bake in preheated oven for 20-25 minutes (depending on the thickness of your tofu or how crispy you want it). Sprinkle with cheese and grill for 4-5 minutes, or until cheese is melted and golden. Garnish with parsley, and serve with rice or pasta drizzled with the pan juices. . . The longer this covid situation continues, and the more restrictions that are placed on us all, the more we are hearing stories of people having a really hard time battling through it all. Parents who are struggling to feed their babies; children who are missing out on their natural playful childhoods; youngsters who feel isolated and alone; people who don’t want to live anymore. Every week this leaves us feeling more and more devastate...d. We know we can’t help everyone out there but we have gotten together with a bunch of local businesses to send out some CARE PACKAGES over the next few months to remind some special people that they are loved, and to try to offer some small help. But we need YOU to help us do this . . We have put together a nomination system where you can nominate someone (or multiple people) who you feel really needs some ‘care’ at the moment. Each fortnight for the next few months we will choose 2-3 random nominations and they will receive an anonymous care package with some goodies from some of the businesses involved to remind them that they are loved and special and to try help them through their week. Each package will be different based on whatever this group of businesses is able to contribute each fortnight . . 15.01.2022 This SIMPLE and delicious Cheese & Herb Zucchini Tart is made with our Fruit Cheese (yeah yeah, some of you might find that weird) but it is SO yum and such a great balance of sweet and savoury flavours! If the Fruit Cheese freaks you out too much though (I am looking at my sister right now, who always firmly swears by fruit NOT belonging in anything savoury ) then this is also equally as delish, and fancy, made with our Herb Garlic cheese for a garlicky finish, or our Dill ...Chèvre for a goats cheese style result It is also a great "activity" to make with the kids as its super easy and fun to layer, but also works with their motor skills and decoration creativity. Dinner, and kid entertainment, in one...!? You can thank us later INGREDIENTS 1 sheet puff pastry (GF if desired) 1 large zucchini, thinly sliced 1 x block ‘The Vegan Dairy’ Fruit & Pistachio Cheese, thinly sliced into squares (or Herb Garlic or Dill Chèvre) olive oil 1 red onion, thinly sliced 1 large handful kale leaves, shredded 1 small handful dill, chopped 1 small handful parsley, chopped 1 small handful mint, chopped 1 tbsp vegan basil pesto salt & pepper METHOD Preheat your oven to 200C (400F). Add a drizzle of olive oil to a small fry-pan and add the red onion. Sauté until soft & starting to caramelise. Add the shredded kale, as well as a little water and cover to allow the kale to steam and wilt down. Add the chopped fresh herbs and stir through. Set aside. Place your puff pastry on a lined baking tray. Assemble the tart by spreading the basil pesto over the puff pastry then topping with the onion/kale/herb mixture. Build stacks of alternating zucchini and the cheese in your palm, before arranging them on the top of the tart. Once all of the zucchini and cheese has been used up & the tart is looking stellar, drizzle with a little olive oil and sprinkle with salt and pepper. There is a lot of "information" out in the world that conflicts with other information when it comes to raising children with proper nutrition, but at the end of the day a parents intuition and love for their babies will always be the winning deciding factor as to what is best for THEIR child.. .... Raising vegan kids can be really tough.. Lots of people like to chime in with why they think you're not giving them the 'best' health opportunities without seeing how healthy that child really is.. So we continue to do what we feel is right for us, for our babes, for the animals, and for the planet.. All you can do is your best, with your own intuition, research, and ethics, right? . Our sweet (cheeky, talkative, too-smart-for-her-own-good) little girl Satya LOVES all the vegan, sugar-free goodies we bring home for her.. She constantly asks for cheese, adores fruit of all kinds (literally a fruitarian in the making!! ), and her idea of 'sweets' is sultanas or dates.. How lucky we are to have a little lady that loves natures plant based treasures so much!! And.. if we dare say.. is the picture of health . 13.01.2022 Waste free and easy!! Soothe your Monday blues with a batch of these oven dried cherry tomatoes to get you deliciously through the week. Perfect served with our Persian Feta (and uses the marinating oil from the jar so that nothing goes to waste!) INGREDIENTS: A punnet of cherry tomatoes... The leftover oil from a jar of @thevegandairy Persian feta Salt METHOD: Preheat your oven to 100C Slice the tomatoes in half lengthways and place cut side up on a baking tray. Cook for 2-3 hours or until all the juicy, fleshy part of the tomato has dried up. Once cooled completely add to the feta oil. 12.01.2022 Another amazing Aussie childhood fav The humble Chocolate Ripple Cake, made double choc mocha INGREDIENTS 160g vegan Chocolate Ripple biscuits ... 1 cup vegan whipping cream (or Natural COYO coconut yoghurt for a healthier option - note this is the only coconut yoghurt that whips) 1 x jar ‘The Vegan Dairy’ Dutch Chocolate Crème 1 tbsp cocoa powder 1 tbsp maple syrup (or any liquid sweetener) pinch of salt cup strong black coffee (decaf if giving to kiddies!! ) To Decorate: chopped/shaved vegan dark chocolate METHOD In a large bowl beat the cream / COYO with electric beaters or whisk until thick. Add the Dutch Chocolate Crème and beat again to incorporate. Add the cocoa powder, maple syrup and salt, beating once again to combine. Have the coffee seperate in a small bowl Make sure you build this cake onto the dish you wish to serve it on as you will not be able to move it later To start building your log take one of the biscuits, briefly submerge it in the coffee, then dollop a heaped spoon of chocolate cream onto one side of the biscuit. Dip a second biscuit into the coffee and place this on the other side of your cream dollop (as if making a cookie sandwich). Stand these two cookies, with cream in between, on their side on your serving plate. Get a third cookie, dip in the coffee, add a dollop of cream onto one side, and place against the cookie sandwich already created. Repeat this with all your biscuits to create a 'log' of biscuit, cream, biscuit, cream, etc Ensure that you save some cream to coat the finished log with. Once you have used all your biscuits and created the inside of the cake, use the remaining cream to gently coat the biscuit log on all sides. This is easiest using a flat spatula Refrigerate for at least 30 minutes before serving, or you can make this in advance and refrigerate overnight. When ready to serve remove from the fridge and sprinkle with chopped / shaved chocolate Make sure you cut slices on a diagonal to get that oh-so-sentimental 'ripple cake' look Recipe by @honeybunchofoniontops #dessert #delicious #chocolate #plantbased #dairyfree

08.01.2022 Sunday brunchin' . . We are usually savoury brunch people BUT who can resist pancakes right!? Gluten free, simple, sugar free, quick, delicious, moist, pancakessssssss.. .... Recipe for the basic pancakes below (we use this one from @chocolatecoveredkatie at home ALL the time) - we served ours with pan-caramelised bananas , creme fraiche , and shaved toasted coconut .. What will you serve yours with? . . INGREDIENTS: Makes 6-7 small pancakes . 1/2 cup rolled oats 1 medium peeled banana 3.5 tblspn milk of choice Pinch of salt Servings of choice . . METHOD: . Grease a fry pan very well to ensure no sticking. Combine all ingredients in a blender or with a hand blender until smooth. Pour / label batter onto already heated fry pan. Flip as soon as they can be easily lifted; cook an additional minute on the other side. This simple but OMG creation has given me back my weekly-All-Saints-TV-show-snack in vegan form (or lets be honest, it was probably Home and Away ) INGREDIENTS: @thevegandairy Dutch chocolate creme ... Biscoff biscuits Vegan chocolate of choice METHOD: Spread the cookies with the chocolate creme and sandwich them together. Melt the chocolate and then coat the biscuits. Pop into the freezer on some baking paper for 10-15 minutes to set. The beauty of this recipe is that you can make as many or as little as you like. 01.01.2022 How yummy and colourful does this delish summer-ready smoked and pickled salad by John Wearne look! Sure to satisfy all your at-home-fine-dining desires . . Ashed Chèvre with Smoked and Pickled Fruit .... Makes 1 large salad for 4-6 people, or 4-6 individual serves . INGREDIENTS . 1 x The Vegan Dairy Ashed Chèvre cheese 200ml rice vinegar 375ml hot water 15ml extra virgin olive oil 110gm coconut sugar 20gm salt 2 granny smith apples 13 daikon radish 1 beetroot 2 radishes Hickory smoking chips Mizuna Rocket . . METHOD . Pickle Mix: . Mix hot water with sugar and salt, add vinegar, cool. Divide into 3 parts. Using a mandolin cut 2mm slices of apple and 1mm slices of beetroot and daikon. Cut 5cm circles using a cookie cutter (optional, for a more uniform look) Using an old steaming pot place a tablespoon of hickory chips in the bottom. Place over high heat and when it starts to smoke turn down to minimum (smoke in a well ventilated space away from smoke detectors) Put the steamer basket on. Smoke the apple for 45 seconds and then place straight into the pickle mix. Smoke the beetroot for 3 min. Place straight into pickle mix. Toss the daikon with a teaspoon of salt. Leave 15mins and rinse well. Place into pickle mix Leave soaking a minimum of four hours, and a maximum of two days. . Plating: . Make a bed of mizuna and rocket Cut and place thin slices of chèvre around the bed of salad Place first the apple and daikon then beetroot taking care not to let drips fall as they will stain the other ingredients. Decorate with finely sliced radishes and edible flowers if you have access to them.
