24.01.2022 It’s a lounging kind of day over here today. Enjoying some me-time with a delicious book, acoustic music records and @fetherbeauty. I’ve been using their natural, vegan skincare range for a couple of weeks and I’m so happy with the results already. I’m a third of the way into ‘Girl, Woman, Other’ by Bernardine Evaristo and it’s such an important piece of writing. Is anyone else reading it? It explores so many important themes including race, feminism and sexuality. It’s written in a unique format so you kind of have to surrender to it and let it envelop you. It’s magnificent!
23.01.2022 Is it a dog? Is it a cat? It’s Mr Tofu! Ready for a pat! This guy is the man of the house. He puts a smile on my face every single time I look at him. I rescued Mr Tofu from an awful breeding situation in the outskirts of Perth when I was running @happybeings_wa and the intention was to nurse him back to health and find him a loving home - but I just couldn’t. 22.01.2022 ~ the ‘get well’ smoothie ~ I’ve been a bit under the weather this week so there’s been a lot of soups and smoothies going on over here. This one packs a bit of a punch with the ginger so adjust amounts to your liking. Blend together:... - 1 banana - 1 cup frozen mango - 2 cups spinach leaves - 2 Tbsp @macr0mike peanut butter - 1 tsp @unicornsuperfoods alkalising greens powder - Peeled nub of ginger (I used a 2cm x 1cm x 1cm piece) - Juice of a lemon - 1-2 cups hemp or almond milk See more
20.01.2022 ~ classic vegan slice ~ Ingredients: 1 cup almonds, blended to flour 1/2 cup sunflower seeds, blended to flour... 1/2 cup pepitas, blended to flour 1/4 cup hemp seeds 1/2 cup pitted dates, soaked in warm water for 10 minutes and drained 1/2 cup rice malt syrup 1/2 cup peanut butter 1 tsp cinnamon 1/2 tsp vanilla essence Pinch of salt 200g vegan chocolate Method: 1. Place almond flour, sunflower seed flour, pepita flour and hemp seeds in a mixing bowl. Add vanilla essence, cinnamon, a pinch of salt and peanut butter. 2. Blend drained dates with rice malt syrup and add to bowl. Mix. 3. Press mixture into a lined small tin or container. I used a rectangular glass food container. 4. Melt chocolate and pour over the top. Place in fridge to set for an hour before slicing. Sprinkle salt flakes on top if desired. Enjoy See more
19.01.2022 ~ banana hemp smoothie bowl ~ There’s no such thing as ‘too cold for a smoothie bowl’. You light the fire or put the heater on and tadaaaa! It’s smoothie bowl weather! God, I miss summer. But hey, this will do for now. Smoothie base is a cup of frozen mango, 2 bananas, a dash of almond milk, a tablespoon of almond butter and a tablespoon of @ausprimaryhemp hemp boost blended together.... Topped with @ausprimaryhemp hemp seeds, chia seeds, frozen raspberries, sliced banana and mint. See more
19.01.2022 ~ dessert smoothie bowls ~ Have you tried dessert smoothie bowls yet? I’m just here to confirm that they’re definitely a thing! Strawberry treat bowl base: Blend 2 frozen bananas with a cup of frozen strawberries, a tablespoon of peanut butter and a dash of plant milk.... Topped with: @therottenfruitbox dried bananas and strawberries, @macr0mike white choc chip cookies and peanut butter caramel sauce made with 3 tablespoons rice malt syrup and 1 teaspoon peanut butter powder. Chocolate treat bowl base: Blend 2 frozen bananas with a cup of frozen mango, a tablespoon of almond butter, 3 tablespoons cocoa powder and a dash of plant milk. Topped with: @therottenfruitbox dried bananas and raspberries, @macr0mike white choc chip cookies and chocolate sauce made with 3 tablespoons rice malt syrup and 1 teaspoon cacao powder. See more
13.01.2022 Lord knows where I’d be without Juno. This girl is my favourite ball of fluff, my gentle wolf, my best friend, my adventure sidekick, my running buddy and my hot water bottle at night. She gives me more than she will ever know. You’re one in a billion Juno! A big thank you to @frontierpets for surprising Juno with her favourite ethically sourced dog food for international dog day. She is made of the best parts of me and stardust and magic and flowers and love. 5 years ago, she came into this world, warm and tiny, and when I pulled her up out of the bath and onto my chest, I knew there was nothing in the world that I wouldn’t do for her. 12.01.2022 ~ roast chickpea leftover salad ~ I love how easy veganism can be. We seem to get a bad rap for ‘complicating’ meals but it’s quite the opposite. I like my meals quick, easy and wholesome. I threw together some leftover rice and diced roast pumpkin, massaged kale with a squeeze of lemon, sautéed a can of rinsed and drained chickpeas with a teaspoon of smoked paprika powder, salt and pepper on high heat to get it nice and crispy, threw it all together and mixed in pumpkin ...seeds, sunflower seeds, a teaspoon of balsamic vinegar, teaspoon of olive oil and a teaspoon of maple syrup. Don’t have pumpkin? Add sweet potato. Not sure about kale? Replace it with baby spinach. Have some hemp seeds? Throw them in. Mix and match and if you don’t want to spend an hour in the kitchen, just keep it simple. Anyone can do it See more
11.01.2022 ~ mexican beans bowl ~ Ingredients: - 1 brown onion, diced - 2 large cloves garlic, diced... - 4 tomatoes, diced - 2 Tbsp smoked paprika powder - 1 tsp ground cumin - 2 tsp ground coriander - 1 tsp Mexican chilli powder - Salt & pepper - 1 can white cannellini beans, rinsed and drained - 1 can red kidney beans, rinsed and drained - 1 large carrot, grated - Half a large lemon Method: 1. Saute the onion and garlic in a little bit of olive oil. 2. Once browned and fragrant add spices, salt and pepper and tomatoes. Place lid on and allow to cook until tomatoes soften. 3. Next add the beans and grated carrot, stir, replace lid and cook for 10 minutes. 4. Squeeze in the juice of the lemon and serve on brown rice. Topped with guacamole, sauerkraut and fresh coriander. 09.01.2022 ~ all hail the kale ~ I recently revamped my office and I’ve been so inspired to work each day. The one thing that always stays is an inspiration board. I can’t work without one in front of me. Is that weird? I thrive on visuals. 07.01.2022 ~ soup all day, every day ~ Is there a word for when you’re nostalgic for a time that you’re still experiencing? I swear there’s a word for it. I can feel winter beginning to pull away so I’m making the most of soup weather while it’s here with a hot mug of buckwheat, potato and white bean soup. Ingredients:... - 1 brown onion, diced - 2 large cloves garlic, finely diced - 1 Tbsp smoked paprika powder - 2 large carrots, diced - 4 large potatoes, diced - 1 cup buckwheat kernels - 2 cans white cannelini beans - 2.5L vegetable stock - Fresh parsley or coriander to garnish Method: 1. Sauté onion and garlic in a teaspoon of olive oil. 2. Once browned, add paprika powder and carrots, stirring for a minute. 3. Add potatoes and stock, turn heat up and allow to cook for 15 minutes. 4. Add buckwheat and cook for a further 5-10 minutes before adding beans. 5. Turn heat off once beans have heated through and buckwheat is soft. 6. Serve with fresh parsley or fresh coriander. 07.01.2022 ~ Always was, always will be ~ I cannot imagine the trauma, pain and suffering that Aboriginal and Torres Strait Islander Peoples have been through and continue to have to live with. I cannot imagine what it would be like to have my child ripped out of my hands and taken away from me. I cannot imagine what it would be like to be taken from my family as a child. I cannot imagine what it would be like to see my mother raped, father shot, sister taken or brother beaten. I cann...ot imagine what it would be like to have my home, land, culture, human rights or freedom taken away from me. I cannot comprehend what the actions of white people has done to First Nations Peoples; what it would be like to live with the consequences of other people’s actions and presumptions every day. 432 First Nations People have been killed in custody in Australia since 1991. First Nations People live, on average, 10 years less than white Australians. The ratio of First Nations Peoples in the prison system and in the foster care system (55%) is horrifying. ‘Sorry’ doesn’t cut it. It’s well overdue that we start doing more. Listen, learn, donate, protest, support and open up the conversation for change. Especially when topped with chocolate @froproicecream. If you want a quick treat that’s vegan and gluten free, this is the one. Ingredients:... 1 can cannellini/white beans 1/3 cup peanut butter 1/3 cup rice malt syrup 1/2 tsp cinnamon 1/4 teaspoon vanilla essence 1/2-2/3 cup almond flour (or blend other nut or seed to flour) 150g chocolate chips or chunks Method: 1. Blend beans with peanut butter, rice malt syrup, cinnamon and vanilla essence. 2. Stir in almond flour to form desired thickness. 3. Mix in chocolate chips. 05.01.2022 ~ raw lemon bars ~ Ingredients: - 1 Cup dates soaked in 1/2 cup water then blended (with the water they’ve soaked in) - 1/2 Cup sunflower seeds, blended... - 1 Cup almonds blended - 1 Cup dessicated coconut - 1/2 tsp cinnamon - 1/2 tsp vanilla essence - Juice of a lemon - Shredded coconut for topping - Lemon rind for topping Method: 1. Line a rectangular container with reusable baking paper. 2. Mix all ingredients together and press the raw dough into the container. 3. Refrigerate for an hour. 4. Cut into slices and top with shredded coconut and lemon rind. Enjoy See more
04.01.2022 ~ vegan french toast ~ You know you don’t need eggs to make a delicious stack of french toast, right? These babies definitely hit the spot all the same! Ingredients:... 6 slices of bread 2 bananas 3/4 cup almond or soy milk 1/2 teaspoon cinnamon 1/2 teaspoon vanilla essence Vegan Butter Maple syrup Raspberries Icing sugar Blend bananas, milk, cinnamon and vanilla and pour into a bowl. Put a large pan on low-medium heat and add a dollop of butter. Once melted, dunk your first slice of bread into the bowl, coating on each side, and place in pan. Repeat until pan is full. Turn each slice once you see the edges turning golden brown, careful to keep the caramelised cooked surface intact. Serve with raspberries, drizzle with maple syrup and dust icing sugar on top.
