14.01.2022 Super-quick spaghetti with zucchini and Manchego. While your pasta is on the boil, grate up some zucchini, finely slice red onion, garlic & red chilli. Fry in olive or coconut oil over a medium high heat for about 5 mins, and at the last moment add some fresh herbs from the garden, like mint and parsley. A squeeze of lemon to finish. Drain the pasta and add to the zucchini mix and stir through. Optional cheese on top to garnish, I had some Manchego, a sheep's milk cheese from Spain up the back of the fridge, so grated that on top. Easy, and all done in the time it takes to boil a pot of spaghetti.
