08.01.2022 Chicken Red Lentil Stew Ingredients 8 Chicken drumsticks with skin removed Flour of your choice 2 tbsp olive oil 2 large carrots chopped 1 onion chopped 4 medium zucchini’s sliced... 1.5 cups chicken stock 2 tbsp tomato paste 0.5 cup red lentils 1 tbsp chopped fresh sage Lightly flour drumsticks and brown in pan with 1tbsp of olive oil in large saucepan in batches. Place to one side. In the same pan heat remaining oil, cook onion and carrot until onion is soft. Return the chicken to the pan, add the stock and tomato paste, simmer, covered for 15mins.
