10.01.2022 Not very often do we get to try a new fruit! We love incorporating new ingredients into our wish lists including dragonfruit!! Do you know about dragonfruit?! Have you tried it before? Dragonfruit is high in fiber, helps to promote a strong immune system and can help boost iron levels.... It has a very subtle flavour and goes so well with strawberries in a chia pudding. Ingredients 1/4 cup chia seeds 1/2 cup almond milk 1/2 cup coconut milk 1 tbsp maple syrup 1 tsp vanilla extract zest of one lime 1/2 cup strawberries 1/2 cup fresh dragonfruit (or 1 tbsp dragonfruit powder) fresh strawberries to top Instructions Mix the chia seeds, almond milk, coconut milk, maple syrup, vanilla extract, zest of one lime. Set aside. Puree the strawberries and dragonfruit in a blender or food processor. Strain and add to the chia pudding. 07.01.2022 Sunday is a great time to prep some healthy snacks for the week!! Have you ever made your own granola? You only need a few ingredients and most likely you already have these in your pantry. For dry ingredients you need oats and then mix in your favourite nuts, chopped dried fruit, coconut, spices and seeds! For the wet ingredients use coconut oil and as a sweet element honey or rice malt syrup. Of course, you can add in all kinds of things but this is a great basic recipe.... Ingredients 4 cups oats 2 cup raw nuts roughly chopped 1/2 cup chopped dried fruit 2 tablespoons of chia seeds 1 cup coconut flakes 1 pinch salt 1/2 teaspoon of vanilla powder 1 teaspoon cinnamon 1/4 cup coconut oil 1/4 cup honey/rice malt Method Preheat oven to 120 degrees and line a try with baking paper. Using a large bowl, combine all dry ingredients. In a small bowl combine melted coconut oil and sweetener and whisk together. Pour wet ingredients over dry ingredients and mix until coated. Spread out on prepared pan and bake in preheated oven for 30 minutes, stirring at least once while baking. Cook longer to desired colour. Enjoy Recipe and image courtesy of Pinterest
