CUP PLAIN FLOUR CUP FINELY GRATED PARMESAN FINELY GRATED ZEST OF 1 LEMON, PLUS THE JUICE OF 1 LEMON 1 CUP MINT LEAVES, FINELY CHOPPED 10 SHEETS OF FILO PASTRY OLIVE OIL SPRAY TSP SESAME SEEDS PREHEAT YOUR OVEN TO 200 LINE THE BASE AND SIDE OF A SPRING FORM TIN. ( I DIDN’T DO THIS AS I AM HOPELESS AT IT SO I JUST I SPRAYED IT WITH OLIVE OIL IN A HEATPROOF BOWL, POUR OVER A FULL KETTLE OF BOILING WATER AND STAND FOR 2 MINUTES OR UNTIL WILTED. DRAIN AND COOL FOR 10 MINUTES OR UNTIL YOU CAN SQUEEZE OUT THE MOISTURE. WHISK THE EGGS, YOGHURT, FLOUR, PARMESAN, LEMON ZEST AND JUICE IN A LARGE BOWL. WHEN YOU HAVE SQUEEZED OUT THE EXCESS WATER , ADD TO THE BOWL WITH THE MINT AND MIX WITH A SPOON. PLACE A SHEET OF FILO PASTRY ON THE BENCH AND SPRAY LIGHTLY WITH OLIVE OIL. .SIDE UP..THEN PUSH GENTLY INTO THE PAN, ALLOWING SOME TO HANG OVER THE SIDES..YOU’LL FOLD THIS UP LATER. CONTINUE THIS PROCESS WITH 10 SHEETS AND THEN POUR THE LIQUID IN AND FOLD UP THE EDGES, LIGHTLY SPRAY AGAIN AND YOU CAN ADD SESAME SEEDS IF YOU LIKE. BAKE FOR ABOUT AN HOUR AND PLEASE LET SIT FOR 15 MINUTES TO FIRM UP BEFORE SLICING.
