14.01.2022 Trying to preserve eggs these days and keep shopping to a minimum. This hand rolled pasta is egg free. Campanelle, translates to little bell in Italian. I paired this with Chicken Picatta. ... 2 1/2 cups of Semolina Flour 1/2 cup of warm water 2 tablespoons of olive oil 1 teaspoon of kosher salt. Use a large mixing bowl when making the dough. Start by sifting flour, and proceed to make a well. Add water, oil, & salt to the well. Using a large fork slowly whisk all ingredients, gradually incorporate flour. Once the dough comes together it will still look a little crumbly. This is when you begin kneading the dough. Knead the dough from front to back for 7 to 10 minutes. The dough should look smooth and should bounce back a little when pressed. Wrap dough in plastic wrap and let it sit for 30 minutes. For this shape roll the dough to about 1/4 an inch. Be sure to flour the work surface and rolling pin. Once dough is rolled out, use a 2 inch Ravioli cutter, work with what you have. When rolling the Campanelle, roll it on a slight bias to form a little bell. Keep a little water availble to help seal the seam if needed. Line a baking sheet with semolina and arrange pasta spread out on it. Sprinkle more flour over the top when finished. @ Brooklyn, New York

09.01.2022 Three bean salad, a true Italian dish served in Italy. One of my first jobs was at Casa Calamari on 18th Avenue and Bath. They made the best three bean salad and string bean and potato salad. I remember working there like it was yesterday. Italian food in America has become open to interpretation. Not every dish has to be covered in Mozzarella and tomato sauce. A dish like this shows the true core of Italian food, simplicity. #BrooklynRoots
