12.01.2022 Fluffy, moist, warm & sweet. You wouldn’t know they were plant based Apple Cinnamon muffins I took these to work today and they were a hit! So thought I better share the recipe with you ... INGREDIENTS Apples 1 1/2 cups apple, diced small 2 tablespoons all-purpose flour 1 teaspoon cinnamon Batter 1/2 cup mashed ripe banana (about 1 large) 3/4 cup granulated sugar 1/2 cup plant milk 1/3 cup coconut oil, melted 1 tablespoon vanilla extract 2 teaspoons cinnamon 1 teaspoon ground nutmeg 1 cup all-purpose flour 2 teaspoons baking powder pinch salt INSTRUCTIONS Preheat oven to 200C Prep the Apples Combine chopped apples, 1 teaspoon cinnamon, 2 tablespoons all-purpose flour, and toss to coat. The flour helps prevent apples from sinking during baking, set aside. Make the Batter Mash the bananas with a fork. Add the sugar, milk (room temp milk will prevent coconut oil from re-solidifying), oil, vanilla, 2 teaspoons cinnamon, nutmeg, and combine. Add 1 cup flour, baking powder, salt, and stir until just combined. Fold in apple and any loose flour in bottom of bowl. Divide batter into 12 non stick muffin liners Bake for about 18-20 minutes, or until cooked through We hope you enjoy these plant based muffins, and if you give them a go we would love to know

05.01.2022 Using vegetables in desserts? These sweet potato brownies are moist, sweet, fudgy, healthier and you won’t even know there’s sweet potato in it! Sweet Potato Brownies... RECIPE BROWNIE: 240g sweet potato (cooked & mashed) 120g nut butter 30g cacao powder 100ml rice malt syrup (honey or maple syrup would work as well) 1 tsp baking powder 1 tsp bi carb soda 1-2 handfuls of chocolate chunks Mix together all ingredients, once combined add the chocolate. Bake at 180C for 35-40 minutes. Allow the brownie to cool down GANACHE: 100g chocolate 100g coconut cream, the solid part (leave in the fridge overnight and the can will seperate) In the microwave or over a pot of boiling water, melt the chocolate, once melted add the coconut cream and continue to heat until you have a smooth consistency. Pour over the brownie, and allow an hour for it to set in the fridge before cutting. We hope you enjoy!
