25.01.2022 At another vineyard, we met a bloke affectionately known as Snooky Burgess. He cooked some things and we watched. In awe, we were. One of these things he cooked was a pannacotta, set with egg white, not a milk jelly set with hooves. I took it with me. This time, for some reason I juiced some celeriac from @elphingrovefarm and made a burnt sugar sauce with the juice. I dehydrated the pulp to crunchy. That's all.

21.01.2022 Miso caramel mousse, honeycomb, peanut butter once upon a time i found a recipe for a caramelised white chocolate mousse. So i made it and it was served with aerated white chocolate, vanilla and lime and i think black currants. But that was 6 years ago. The next time i made it i put @merumiso miso in it and put it in the freezer and served it with honeycomb and peanut butter. This business went on for 3.5 years until we decided to just not freeze it again. Neither moose nor mouse were harmed.

15.01.2022 Chicken, almond, salsa verde ><><><><><><><><><><><><><><> Once upon a time i was in Portugal attending the running of the chickens. A dangerous annual event, celebrating the humble chicken. Thousands of blood thirsty chickens chase adrenaline filled children high on aged sherry and Peri peri across the street of Quinta do Lagos. This dish is in no way inspired by this cruel, fabricated event. It is however really good and has never left the menu.



14.01.2022 Vanilla slice. My girlfriend was banging on about vanilla slice for ages. Like really really banging on. I really like making her smile so I made a vanilla slice for all the restaurant guests and told her a funny joke instead. *sidenote - I also gave her vanilla slice.

08.01.2022 Smoked chicken, cabbage, miso We use our wood fired oven everyday. Its the heart of the kitchen. This time we used it to smoke the chicken that went into the mix that went into the pot that had diced cabbage and speck and spice and lots of things that are just as nice. It got wrapped in the cabbage then went into the oven, next to the fire. It went into the bowl, with a bath of miso broth. It went into the restaurant, onto your spoon and into your mouth. This was just one of our favorite things.
