20.01.2022 Aren’t these the cutest snacks? **Blueberry French Toast Scrolls** These naughty but nice treats are full of all the good things - and they are absolutely irresistible to children (and adults). ... Although they look a bit fancy they are actually very quick and simple and keep for a few days. I think they would make a great party snack. **Blueberry French Toast Scrolls*** 60g Frozen or fresh blueberries 2tsp chia seeds 6 slices of whole grain bread 2 eggs Splash of milk Coconut oil for cooking 1 First make the jam. Put the blueberries in a small food processor and blitz. If your blueberries are still frozen you might need a splash of water. Stir through the chia seeds and set aside while you prepare the bread. 2 Cut the crusts off the bread and with a rolling pin flatten the bread a little. Spread some of the jam onto one slide of each piece of bread. Roll up each piece of bread squashing them a little to stay rolled up. 3 Combine the eggs and milk in a shallow bowl. Dip the scrolls into the egg mixture. 4 Heat a frying pan with the coconut oil on a medium heat. Add the scrolls to the pan. Cooking the open edge first will give the scroll a good seal. Cook for 2 minutes on each side turning regularly. 5 Allow to cool slightly and slice each scroll into 4 pieces and serve. Prep 10 mins | Cook 10 mins Makes about 24 pieces Suitable from 9 months Fridge 3 days (serve warm or cold) See more
