21.01.2022 I'm not coping. I'm just going to repeat that.... I'M NOT COPING. * And do you know what?... That's actually OK. I'm not going to go into the (long) list of all the reasons that there are days that I'm not coping with the world - everyone's got their own damn list right now. I'd rather talk about why I believe it's a positive step to say these three words out loud - even if it's just to yourself. This is absolutely not about garnering sympathy or creating worry for those around me - a little bit the opposite, I hope. And it ABSOLUTELY does not mean that even when I do feel this way - that I don't still get up, put my pants on, kick the crap out of the day and achieve great things. I can do both. This is me admitting, out loud, to myself that 'I don't got this'. That I'm struggling at times and at others I'd love nothing more than to hide away and not be responsible for anyone or anything for a bit. It's really just me saying to myself that I don't have all the answers and you can actually admit this occasionally and it doesn't mean the end of you. Creamy, tasty, and ready in minutes - loaded with protein, fibre, and healthy fats to keep you running until the next meal. Is Peanut Butter Healthy? The healthiest peanut butter is the natural variety made from only peanuts (and perhaps some salt). Peanuts are rich in protein and fats, which help satisfy hunger and boost energy - it's also an excellent source of niacin and vitamin E, vitamin B6 and a range of minerals. Also, something extra-special happens when you blend a frozen banana - great for thickening smoothies. Go for the ripe, spotty ones - sweeter than less ripe fruit, which works great in this recipe. In terms of nutrition, bananas are an excellent source of vitamin B6 and a good source of fiber, vitamin C, and a variety of minerals. To Make: Firstly, chop and freeze the bananas overnight - then toss the following into your blender: 1 medium frozen spotty banana (spotty bananas are naturally sweeter) 1 cup of any plant milk (we like oat milk in our smoothies!) 2 tablespoons of peanut butter (or more to taste) 1 tablespoon maple syrup (if you’re using it) Next, blend on high power until the mixture is smooth. That’s it pour it into a glass and enjoy! To tailor your smoothie even more: Add 1 more frozen banana to thicken Or to keep the calories down, add 1/2 cup frozen cauliflower instead! A tablespoon of chia or flax seeds will thicken your smoothie and add omega-3 fatty acids Add in Cacao Powder or your favourite Chocolate Powder Throw in some fresh Berries to have your take on a liquid PB & J! Or, for something more refreshing, add a handful of ice cubes before blending.
