11.01.2022 Market to Master Philippines Province - Ilocos, Pugudpud I thought I would post another webisode from this series. Showing the regional cuisine of the Philippines. ... Rain rain go away. Its been almost two months since our last market thanks to the recent wet weather we've had in Sydney. We've missed dishing out our food and seeing our regular customers. 08.01.2022 What is Filipino Food? Region: Ilocos Norte - Vigan A few weeks back I stumbled across this series by a South African Chef called Market to Master. He travelled around the Philippines to explore the different types of food the country has to offer. Filipino Food is the ultimate fusion food from Indigenous, Malay, Chinese, Spanish and later American. Our flavours are more subtle than our neighbouring Countries and as I have discovered very regional. Prominant flavours you will... find in our cooking is Soy and Vinegar. It is no secret that Filipinos LOVE Pork and we are famous for it in our Crispy Lechon. But that is not where our food stops. Surrounded by ocean our seafood is so fresh and rich land produces a bounty of vegetables. I will be featuring an episode each week. 03.01.2022 Hi Folks. Its Friyay! Due to the weather conditions the Street food Market at Marrickville has been cancelled for tomorrow. Next one will be 4th of March. Stay safe and dry this weekend. Looking forward to much needed rest and we'll be back with more next market.



03.01.2022 Soul Food - Lugaw (Filipino Rice Porridge). When I think of Soul food, I think of food that is comforting and warms your whole body. Like your favourite blanket. Unluckily enough, I have been struck down by the cold. Nothing in the world makes me feel better than a bowl of Lugaw. I just wish my taste buds was working more. Lugaw is a Filipino Rice Porridge often eaten with your choice of Condiment. So today I made myself some in an effort to make me feel better. I served mine... with Crispy Tofu, Green onions, boiled egg, garlic chips, kalamansi (citrus often used in filipino cooking) from my own tree and ginger threads. This dish also reminds me of time with my dad. When we were still living in Philippines, he would take my sister and I to the local lugaw house early in the mornings for breakfast. There the condiments ranged from soft tender pork to lambs brains. My dad was a very busy man and we didnt see much of him back then. But its the little moments you remember. Maybe I can make this dish for the markets in the winter months so you can try some Filipino Soul food. See more
