25.01.2022 HOME MADE SAUERKRAUT Super easy. Super delicious. The best part of being home bound is getting around to all those things you want to do make from scratch but end up buying due to time constraints. As a cafe owner, I am cooking all of the time but need to grab convenient options the same as everybody else. Sauerkraut though really is so quick and easy to throw together its worth putting on your list. Cabbages are in abundance at the moment and huge, so you will get four jars out of one large cabbage. Equating to around $2.50 per jar. (Organic cabbage that is.) 21.01.2022 CHICKPEA MASALA OR CHANNA DAHL One of my most favourite curries to make. So quick and easy and delicious. If you prefer it a bit creamier, remove a cup, purée and then return to the pot. Dont be put off soaking your own legumes. Its just a matter of popping them in a pot before bed, drawing and finding them when you wake and simmering them whilst you are getting ready for your day. Serve plain in their cooking syrup, chopped and added to your porridge or chia puddings, add whatever takes your fancy. We activated some cashews and almonds and roasted them on top. The third image we added orange blossom, vanilla and maple syrup to whipped coconut cream for a decadent dessert. But have you thought of making your own? Its super easy and you can control the sodium levels. Plus a fantastic source of protein with a whopping 24 grams per 100 gram serve. . Add whatever herbs or spices you like to the mix. Here is an Italian style that I grate to use as mince, slice for pizza toppings, ...pan fry as a sausage. The colour is from organic tomato paste and paprika. Use vegan stock cubes to change the flavour base. Chicken style stick w sage make wonderful chicken sausages. We had to research the herbs and spices that made it unique. Plus learn how to use aromatics to enhance a stock. Technique is so important in bringing out flavour to your food. Simple yet so effective. We charred the onion and ginger and toasted the spices. We also kept it authentic without animal cruelty. They are jam-packed with vitamins and minerals including manganese, magnesium, phosphorus, potassium, iron, copper, zinc, Vitamins B1, B2, B3, B5, B6 and selenium. The copper is fantastic for your skin and hair. They lower blood sugar levels, aid digestive health and reduce heart and chronic disease. Try to source from a shop with high turnover and that are certified organic. Mine are... from @terramadreorganics. I soak them for 12 hours, drain and cover with a tea towel.
