16.01.2022 Christmas/Easter Fare with Flair Lightly smoked Turkey breast can be a wonderful change from the norm at any festive celebration. Soak single Turkey breast approx. 3kg in brine overnight.... Brine:- 1 cup brown sugar 1.5 cups rock salt 4 cups water. Place 2 tbsp sawdust on base of oven. Place Turkey breast on rack, smoke for 30 minutes and let stand (lid on) until cool. Garnish with black cherries. Carve & enjoy! Can be served with cranberry sauce, leek & potato sauce or serve cold on crackers as Hors D’oeuvre.
