Regimentally spaced tables and seats provide ample dining room with a solitary segregated bench lining the back wall of the restaurant, reminding you that you are/can be an independent wom...an/ man who needs no man/ woman (you just need ramen tbh). In true Ramen Rater fashion, we ordered the OG, Emperor of Ramen; the Tonkotsu Ramen. Tonkotsu Ramen: at first glance, this ramen contains all Tonkotsu Qualifying Elements (TQE): slices of delicately cut pork belly; tender and mild half-eggs; and robust bamboo shoots topping the unassuming, innocent noodles bathing in a shimmering light brown porky broth. Rest assured this ramen is anything but ordinary. The broth is velvety and pork-tastic, striking a fine balance between the forces of saltiness and richness in the battle for Pure Porky Power. The noodles are firm, yet not jaw breaking, providing a very satisfying chew and adding homely textures to the dish.
