23.01.2022 Online and in store - NV Castelmaure La Buvette from the Languedoc, France. $24. And no, thats not a typo @ditc.wine . From the village of dEmbres-et-Castelmaure in the heart of the Corbieres region of Southern France, this is quite possibly one of the most satisfying glasses of wine we have had this year. Made up of 60% Grenache and 40% Carignan, this is a 750ml liquid flight to Paris where you can imagine drinking this very drop in volume, slightly chilled, washing down bistro favourites at the local corner spot. Nothing better alongside some game on a cold Monday night.
23.01.2022 CASA CATERINA. Now available @ditc.wine. We are so excited to be able to bring these incredible wines to the shores of Australia, and we think youll enjoy them immensely! . From vineyards located in the Franciacorta zone of Lombardy, the phenomenal Del Bono brothers make sparkling wines with zero additions (save for the liqueur de tirage) that arrive from densely planted, organically-farmed vineyards that have never seen a synthetic herbicide or pesticide sprayed on them in ...their long history. . Aurelio Del Bono takes his inspiration from time spent working for Anselme Selosse (Avize, Champagne) by producing wines with greater fruit ripeness than the rest of the zone, resulting in a wine that is aromatically generous and opulent, but that finishes with laser like precision from the lack of dosage. . Although located in the Franciacorta zone, the brothers have renounced the DOCG denomination in order to create wines unhindered by this classification, and that reflect the purity of the landscape in which they farm. They farm seven hectares, spread between the areas of Gaina, Dovecote and Persaga, which are located in the limestone rich soils of the East, on steep slopes with suitable exposure. . No sulfur nor dosage is added to the wines at any stage, the ferments are wild, and the wines are kept on lees for an extremely generous time (sometimes up to ten years!). . If you enjoy lively Pet Nats, but with the complexity of great Grower Champagne, then these wines are for you. If you like wine that tastes like fruit and minerals instead of oak, yeast and alcohol, then these wines are for you. But most importantly, if you prefer immaculately-farmed wines crafted with a gentle hand over entry-level Champagne with a well-known label, then these wines are for you. See more

20.01.2022 Georges Descombes is to Beaujolais’ original ‘Gang of Four ‘what Cappadonna was to Wu-Tang: The unofficial 5th/10th member who is probably now in the gang. A stalwart of Beaujolais, he took over the domain from his father in 1988 with just a half hectare to his name. He now produces some of the most consistently delicious, pure and vibrant wines from this region year in year out. We look forward to the wines dearly each year, especially the VV Brouilly, which is Cru Beaujolais mastery manifest. Concentrated flavour of red and dark cherry with mineral freshness.

In this case, we have 100% Cabernet Franc, fermented with some use of whole bunch and matured in old small format oak. Vibrant, slightly leafy, with some funk as the name suggests. 18.01.2022 2017 Massolino Langhe Nebbiolo, via our online store @ditc.wine. Baby Barolo is the usual term thrown around when discussing this wonderfully perfumed and structured Nebbiolo from the Eastern Serralunga zone of the Barolo region. An aromatic wonder, supremely detailed in the mouth, and framed by finesse. Add some flame-licked edibles from the BBQ (perhaps even pick up some of @Luke_headon23 skewers from the Cellars), and Monday starts looking a lot like Sunday.

All the classic house style tricks are evident in this wine, including natural ferment, considered whole-bunch inclusion, carbonic maceration, and an overall soft, approach to vineyard work, picking window, tannin extraction and time on skins.

These tasty treats come curtesy of our good mate @luke_headon23, a chef with an incredible pedigree (have a read below) Pick up yours when youre next in store for the perfect no-fuss dinner. Limited numbers each week. . Theres no doubt about it, these latest restrictions have got us all dreaming of all the great things we can do once the lockdowns are lifted. None of us more so though than chef, Luke Headon. . Lukes ...not just rife with anticipation of being able to head to the pub for a pint, hes also sitting on the cusp of opening one of the biggest restaurant openings in near future. The opening of the new 80 Collins Street precinct will be a game changer for the Melbourne CBD, and Luke is set to fire up the stoves at the highly anticipated new venue by Martin Benn and Vicki Wild as soon as he possibly can. His years of experience cooking include time at acclaimed UK restaurant The Fat Duck, as well as helming the Yarra Valley restaurant of Levantine Hill. . So what does a chef like Luke do with his ample time whilst waiting for such an opening? He cooks of course! Luke is creating and preparing simple yet sophisticated skewers in a take home format destined to be popped on the BBQ or into the oven. Something exciting to break up the lockdown monotony, spice up lounge room aperitivo, or compliment Netflix & Chill. His Bourgogne Rouge (pictures here and available online @ditc.wine) has been nothing short of excellent the last three releases. This is classy, silky Pinot Noir with depth that punches well above its division.

Medium in body, the red fruits that burst from the glass pull up appropriately short of confection, tipping its hat to the restraint that makes this producer a true leader in Australian Grenache. . 2018 Syrahmi Demi Shiraz, Heathcote (Vic) - You dont talk about Shiraz in Victoria without speaking the name Adam Foster. Demi is the entry to the wonderful world of Syrahmi wines, full of brightness, graphite, red and dark fruits and savoury herbs. Lock me down with this no problem. . 2018 SC Pannell Montepulciano, Langhorne Creek (Sa) - Montepulciano, the great workhorse of Italian grapes that is hard not to adore in any and every setting, especially as the nights become colder. It grows so well in South Australias warmer regions and Steve Pannell has created an absoloute beauty here. Dark fruits and dried herbs, the wine evolves every time you pick the glass back up. . 2019 Vino da Tavolo Rosso, Central Victoria (Vic) - Wine for the table! Following years of selling his grapes to iconic natural winemakers such as Frank Cornelissen and Lamoresca, Dario Serrentino began vinifying and bottling his o...wn estate wines in 2014. Located by the sea in Val di Noto (South-Eastern Sicily), these wines feature the unmistakable fine salinity that comes from beach vines on limestone soils. The ‘Calaiancu’ Bianco is a Grillo-dominated blend, full of bright lemon flavours, saline-tined acidity, and stony minerality. The ‘Calaniuru’ Rosso is driven predominantly by the achingly bright freshness of Frappato, while Nero d’Avola lends a little added grunt and spice. To read a little more about this amazing producer, head to the @ditc.wine page and look for the last Casa Caterina post. As for this wine.... . Whilst traditionally a sparkling wine region (and producer) this is a still wine that is, with all hyperbole aside, the most exciting wine we have tasted in the last two years! 100% Chardonnay, picked six weeks after the sparkling grapes, and then spending six days on skins. It is simply awe-inspiring in its uniqueness, opulence, and downright amazement. The Del Bonno brothers have found a new primary colour in the world of wine. Genius!

Medium bodied, plush and oh so fresh! . 2018 Sam Vinciullo Cabernet Sauvignon (Cowarump, Margaret River, Wa) - The grapes are dry grown near the town of Cowaramup in the Margaret River region and farmed using organic practices since taking over the vineyard at the beginning of 2017 . All vines are own rooted. Fermented on skins and made without any pumping, temperature control of ferment, filtering, fining, oak or additions. Just grapes. . 2019 Felix Caspar Cosmo Cabernet Sauvignon/Franc (Wilyabrup, Margaret River, Wa) - The Cosmo is a special number by this sibling winemaking duo, blending half of each of their other parcels Original X and Birdie together to make a sulfur-free dream. 07.01.2022 ONLINE WINE: 2015 Cobaw Ridge Syrah (Macedon Ranges, VIC). Available now at @ditc.wine. Allen and Nelly Cooper produce incredible wine, farmed bio-dynamically and made with a gentle hand. Their Pinot Noir and Chardonnay are exquisite and well celebrated, but for those that have a soft spot for the Syrah wines of Saint-Joseph, on the Eastern banks of the Rhone River, this is a wine for you. Elegant, peppery, spicy, mineral graphite-driven Syrah that is dark-fruited but aromatically pretty. If you have the time, its got the time if you know what we mean Decanter, big glasses, and nowhere to be in a hurry.

06.01.2022 We’re delivering today and all weekend, and we reckon this is the perfect bottle for cloudy nights indoors. . 2018 Marco Crivelli Grignolino D'Asti (Piedmont, ITA). Via @ditc.wine. One of the shining lights of Monferrato, Crivelli is most famed for the little known variety ‘Ruche’ that they farm in their light chalky soils just North East of Asti. In fact Marco Crivelli was the president of the Ruche Consortium, showing just how committed they are to it. The Grignolino produced here is delicious too, from 30+ year old vines it is light, bright and dainty, with a mountain herb character wrapping around bright red fruits. Lovely!

02.01.2022 Chardonnay forever! New release Chablis from Moreau-Naudet has arrived in our online store @ditc.wine in limited numbers. . Before his untimely death in 2016, Stephane Moreau was known as The Antichrist of Chablis, and I was lucky enough to taste with him at the winery just months before. Non-conformists in the village of Chablis are a rare thing, but Stephane was certainly that. .... He dismissed the stereotype of crisp, lean Chablis as the product of industrialised farming and production, short ferments, and aging in stainless steel. He instead chased ripeness and power in his wines, often being the last to pick, and choosing to age in barrel (except for the AC and petit Chablis), rather than stainless steel. . Virginie Moreau-Naudet carries on her late husbands work at the Domaine, creating powerful expression of Chablis that are full of fruit flavour, flesh and intensity.
