24.01.2022 CHOCOLATE STRAWBERRY ** KIDS COOKING ** If you can handle the kids in the kitchen with you, this one is a good one.... INGREEDIENTS: Strawberries (green tops removed) Milk, white or dark chocolate melts QUANTITIES: 2x punnets of straweberries 200g of chocolate melts Use what you have If you have too many strawberries or not enough chocolate (however you look at it), just dip the tops of them. Here I used milk chocolate melts from Aldi. The taste isn't there. You are better off using Cadbury for a brand. Kids didn't care or notice the taste. I did. METHOD: Put chololate melts in a microwave proof bowl (I used a pyrex jug), and smash it on high for 30 sec. Then remove, stir and another 30 sec and again, stir. Keep doing this until chocolate is runny. Drop a few strawberries in the runny chocolate at a time and completely coat. Remove coated strawberry from the chocolate and place on grease proof paper until they "set". Eat. There are better ways to make this look nicer... but it's important to get kids in the kitchen making a manageable mess and learning asap. 23.01.2022 MINI CAPSICUM SEED SAVING 1. Pick the mini caps off the bush 2. Pick a nice looking one 3. Open it up... 4. Take out the middle seed clump 5. Separate the seeds from the fleshy part and place on paper towl and set to dry 6. When dried out (about 1 day), store in a paper bag and label with the date 7. Store in a cool, dry place 8. 12.01.2022 EASY APPLE AND RHUBARB CRUMBLE 3 large apples peeled cored and chunky chopped (use whatever you have, here I used yucky ones from Aldi) 3-4 stalks rhubarb 1x lemon peel and then de-seeded and chop up.the flesh of the lemon and add all... 1/2 cup sugar 1 tablespoon of plain flour TOPPING 1 cup of self raising flour 1 cup of rolled oats 1 cup of brown sugar 1 teaspoon of cinnamon 125g of butter melted Add all dry topping ingredients to a bowl, mix well. Pour in melted butter and mix well until it clumps. Crumble topping over top of apple and rhubarb mix. Bake for 35-40 mins at 180 deg or until topping is golden and crunchy. Let sit 10 mins for the filling to thicken, then serve with thickened cream or anything else you like. I think this is sweet enough without adding icecream or custard. TIP: Make more of the apple and rhubarb mix if you have more apples or rhubarb to use. Cool and freeze separately and make another one at a later date. Happy cooking Everyone!! 09.01.2022 REJUVENATING SEEDLINGS Kid brought these seedlings home from school. Winter veggies too.. yay! It's winter right now. Put them all in the plastic box Barbie came in and filled the tub. I didn't water them from.the top. Rather, let the capillary action do its thing.... 1 day only, and these are now ready to plant. Before u think seedlings are done, do this. 09.01.2022 NO FAIL CHOCOLATE SLICE 125g of melted butter 1 cup of brown sugar 1 egg... 1 teaspoon of vanilla essence (or Limoncello) 1/2 cup of coconut 1/4 cup of self raising flour 1/2 cup of plain flour 3 tablespoons of cocoa ICING ON TOP 1 cup of icing sugar 2 tablespoons of cocoa 1 tablespoon of softened butter 1-2 tablespoons of boiling water (or as much as you need to make a spreadable icing) Preheat oven to 170C - 160C, Line a small tin (1/2 a leamington tin) with baking paper leaving and overhang for easy lifting out. In a bowl, add everything and mix. Press mixture evenly into prepared tin. Bake for 20 - 25 mins. Check at 20 mins, you just want it just firm to the touch Remove from oven and place on wire rack. ICING: Add all icing ingredients and mix to a smooth spreadable paste. Spread on top.of slice and your done! Everything is better with butter.
