24.01.2022 Ingredients 1/4 cup apple cider vinegar1/4 cup apple cider vinegar 1/2 teaspoon kosher salt1/2 teaspoon kosher salt 2 tablespoons minced red onion or shallot2 tablespoons minced red onion or shallot... 2 English cucumbers, sliced thin2 English cucumbers, sliced thin 2 tablespoons chopped fresh dill2 tablespoons chopped fresh dill 2 ounces feta cheese, crumbled2 ounces feta cheese, crumbled 1/3 cup unsalted pistachios, roughly chopped1/3 cup unsalted pistachios, roughly chopped 2 teaspoons olive oil2 teaspoons olive oil 1/4 teaspoon freshly ground black pepper1/4 teaspoon freshly ground black pepper Instructions Add the apple cider vinegar and salt to a small saucepan and bring to a simmer over medium heat. Once simmering, add in the minced red onion or shallot and remove from the heat. Let the onion steep and cool in the vinegar for 10-15 minutes. In a large serving bowl combine the cucumbers, dill, feta and pistachios. Pour the onion and vinegar mixture over the top of the salad and add in the olive oil and black pepper. 23.01.2022 GREEK LEMON CHICKEN Ingredients 5 chicken drumsticks* 4 tbsp lemon juice fresh... 1 tbsp olive oil 1 tbsp dry oregano 2 cloves garlic pushed through a garlic press 1 1/2 tsp salt 1/4 tsp pepper 1/4 cup Kalamata olives 2 tbsp Feta cheese crumbled Instructions Preheat the oven to 175C. Rinse the drumsticks, pat dry and place it in a medium baking pan. Drizzle chicken with olive oil and lemon juice. In a small bowl combine oregano, garlic, salt, pepper and rub it into a chicken. Bake for 60 minutes and Flip the chicken halfway and baste it a 4-5 times during baking Remove from the oven, sprinkle with Kalamata olives and Feta cheese. 13.01.2022 Tip Tuesday! Do you love eating berries? If you do, only wash your berries if you plan on eating them soon, as it turns out washing them causes them to deteriorate at a faster rate.

13.01.2022 INGREDIENTS 2 medium eggplants washed, chopped in half length-ways 1 tbsp olive oil GLAZE... 1 TBSP dark miso paste 1 TBSP brown rice vinegar or apple cider vinegar 1 tsp pure Maple syrup or a brown sugar 1 lemon - juiced TOPPING 3 Spring (salad) onions washed, chopped 2 TBSP sesame seeds toasted INSTRUCTIONS Wash the eggplants then slice them in half, length-ways. Use a knife to score the chopped side of the eggplant halves, one-way and then the other so you achieve a crisscross pattern. Do not score too deeply otherwise they will fall apart whilst cooking. Brush the tops of the eggplants with the oil - or drizzle it and use your fingers to spread evenly. Place them in a pre-heated oven at 180 degrees C for 25 mins until cooked through and soft. Whilst the eggplants are roasting, toast the sesame seeds in a pan (without oil) for a few minutes over a medium heat. As soon as you hear the first few seeds start to pop, they are done. They will start to burn shortly after so remove from the heat and set to one-side. Prepare the Spring onions by washing a finely chopping. GLAZE Simply add all of the glaze ingredients to a small bowl and mix together with a spoon. Once the eggplants have cooked, take them out of the oven, brush the tops of the cooked eggplants with the glaze then place them under the grill for around 10 minutes until they start to char and caramelize. After they have been under the grill, serve with a scattering of chopped spring onions and toasted sesame seeds with optional green salad leaves or rice. & courtesy of https://thebalancedkitchen.co.uk/
