21.01.2022 At the end of a wonderful week in Melbourne, here’s what Joanne was taping about this morning on @abcinmelbourne . Halloween pumpkins - in truly spooky news, they’ve been extremely difficult to come by this year. Between the drought, and uncertainty around being able to celebrate Halloween during Covid, not many were planted, and supply has run dry . Australian garlic - while fresh local garlic has been available for around a month now, we have just seen the arrival of the f...irst cured garlic of the season. Supply from QLD initially - and while it isn’t cheap at the moment, it is vastly superior to the imported stuff . Iceberg lettuce - the buy of the week. Great quality and value . Wombok - regular Cabbage isn’t at its best during the spring, but Chinese Cabbage (Wombok) is excellent. Nice generous heads, with a softer and sweeter flavour than regular cabbage. Dress lightly with an Asian-style vinaigrette and enjoy! . Celery - great quality this week. Crunchy and flavoursome. Try our modern turn on a classic Waldorf, with Celery, apple, walnuts, green olives, radicchio and shaved Parmesan, then dress with a lemon, crushed anchovy and mayonnaise dressing . Cherries - lots of reasons to smile this week - pubs open, sun out, and local cherries hitting the shelves! This first crop is from Young in NSW, and they have started in fantastic fashion. The quality and price can be a little bumpy early in the season, but that will level out over the next few weeks . Local stone fruit - the quality and price of local peaches and nectarines has improved a bit this week, with the start of the Swan Hill season boosting supply. The white varieties are better earlier in the season, with the white nectarines the pick of the bunch. Apricots have also just started, but better to wait a few weeks for these See more

21.01.2022 This way for world‘s best coleslaw . Sugar-loaf cabbage available today at our Kew store. . A distinctive conical shape, this variety is particularly sweet and tender, almost like Butter Lettuce. For that reason, it makes for fantastic use raw in salads like coleslaws. It also pickles well, with its extra sweetness standing up to the pickling flavour



20.01.2022 Some weekend cooking inspiration care-of our staff. Nduja* and Vongole sauce . (*Nduja is a skinless salami that can be used to create a wonderful base flavour in sauces) . INGREDIENTS... - 1kg Goolawa Pippis (Vongole) - 2 heaped tablespoons of n’duja - 2 big cloves of garlic chopped - 1 long red chilli chopped fine (optional) - 4 ripe tomatoes - 150ml dry white wine - Two handfuls chopped parsley - Pasta or fresh crunchy bread to serve METHOD: - Preheat oven to 180C. - Heat a roasting pan on the stove. Add olive oil. Once heated add n’duja and melt It down. Add chilli and cook for a couple of minutes. - Add garlic and cook for another couple of minutes. Add fresh tomatoes. Cook for maybe 5 mins - letting it soften and infuse. - Add wine. Let the alcohol cook away and bring to a gentle bubble. - Add pippis. Stir them in the sauce. Pop in oven and cook for 10-12mins. Check and see if pippis are open then take out. - Add parsley and stir around. Then serve over pasta or fresh crunchy bread

05.01.2022 With some sunny days on the way, here’s what Joanne was spruiking on @abcinmelbourne this morning... . Black Garlic - while we’ve been talking up the start of the local fresh garlic season, we’re also seeing some beautiful black garlic available this week. This garlic is gently heated and aged over several weeks, turning the cloves soft and vivid black. The taste is super rich, slightly sweet and smokey, with a Balsamic-like character. While it is expensive, you only need a t...iny amount due to its intensity of flavour. Try adding some to salad dressings, or mash through butter to spread over roast chicken on potatoes. Seriously delicious . Broad beans - with supply coming from Wandin in Melbourne’s east, broad beans are at their absolute peak right now. Beautiful sweet flavour, and well priced. Try a salad of broad beans, peas, shredded butter lettuce, torn fior di latte, basil, mint, parsley, lemon juice and zest and good quality olive oil . Lebanese cucumbers - the buy of the week. Great value. And a great hot-weather snack for the next few days. Equally good in a G&T . New Season Onions - recognizable from their pale colour and soft skins, new season onions are sweet, juicy and easy to cut. But the one disadvantage to onions at this stage of the season is that they take longer to soften when cooking. So make sure you really sweat them off before you add anything else to your dish . US Pomegranates - probably the only positive thing coming out of the States at the moment. Ironically, these bright Red fruits come from deep Blue California. But the variety, aptly called the Wonderful Pomegranate, is one of the best. They have super sweet, ruby arils that are full of juice. A note that they are a little more expensive this year than normal, due to increased freight costs with Covid . Pineapples - 2 varieties available at the moment. The regular Gold pines are topless and have a deep yellow colour. They are very sweet and low-acid. The Smooth variety pineapples are the old-school Aussie pines with the festive top. While they are more pale in colour than the Gold, they actually have more flavour. Both are the same price, so the choice is personal See more

05.01.2022 Some weekend inspiration for you. Stuffed Zucchini flowers seem intimidating, but they’re actually quite easy, and always impress. While they are a little time-consuming, they can easily be prepped early, and then fried before serving. . The steps above are a universal guide, so you can go free-for-all with fillings and serving condiments. Ours are always stuffed with ricotta, pecorino, chili, capers and fresh mint. And we served it with a broad-bean pesto and drizzle of bals...amic reduction. But there are many filling variations, and you can also serve with aioli or salsa verde .
