25.01.2022 Apparently sales of fresh produce, especially leafy greens such as spinach and salad bag mixes, are down as a result of the coronavirus outbreak. It seems we have forgotten about fresh in our bid to stock up on pantry essentials. Dont forget the fresh stuff! Not only do these veggies supply nutrients that support our immune system and overall health, we also need to support our Aussie farmers. They have battled through drought, bushfires and now the... coronavirus. They desperately need our support. Bagged lettuce mixes, rocket, spinach and other leafy green combos are convenient and easy to use. The green smoothie phase may have abated somewhat, but they are a great way to boost your leafy green intake. I find that making one mid-afternoon helps to stop me snacking on less healthy stuff and keeps me going to dinner. Recipe for this one from @oneharvestaus using their bagged spinach - love it Heres what goes into it: 1 cup frozen mango 2 inch piece Lebanese cucumber 1 cup Baby Spinach 1 inch piece fresh ginger 2 tbsp Greek yoghurt Juice of lemon cup milk of choice cup water 4-5 ice cubes Blend in a high powered blender until smooth.
