Tim is a highl...y regarded, professional chef with a passion for creating cuisine using fresh, seasonal and local ingredients. Here he is with our signature dish off the menu, the ‘600gram Tomahawk Rib Eye Cutlet’ with a ‘Surf’ topper consisting of tiger prawns, mussels and squid finished with a garlic cream sauce.
