25.01.2022 Loving the pace of a lazy Sunday. With the end of MasterChef comes a new chapter and adventures. However, this first picture was taken whilst we are watching Laura and Emelia cooking their hearts out and giving it their all- not only do I love dearly love these two women but I know how much they dearly love each other and yet are both hungry for the title and have worked so hard to get to this point, so much respect for them! #masterchefau #masterchefaustralia

23.01.2022 Baking therapy alert! This Blood Orange & Marscapone Mousse Tart is perfect if you love to anchor yourself in a project and enjoy taking the time to cook something a little special. There are 3 main elements here and I have constructed it as a tart but it works equally as well if you want to do it as a deconstructed dessert. 19.01.2022 It feels a bit challenging to share recipes at the moment that for many of us are reminiscent of gathering, celebrations and special occasions and where we would normally be surrounded by friends, family or loved ones. At the same time, that is the beauty of food. What originally drew me to cooking was because it had this innate quality which seemingly allowed me to travel to another time or place. Or even evoke a memory, making it easier to conjure the details just a little ...more viscerally. So, for me Pavlova takes me to summertime. Surrounded by family and friends outside, on a hot night outside on the verandah, with conversations that last late into the night. So regardless of where you are or who you are able to be with right now, maybe there is a dish, that for you sparks a memory of a time, place or loved one and cooking it brings that memory a little closer. Even though Pavlova is an old favourite, the making of this is a new combination. This particular combination came together as I wanted to use up some excess ingredients in my fridge and freezer and yes it probably sounds a little ridiculous because l get it not everyone has Davidson Plums hanging around in their freezer! So I have given a frozen mixed berry substitute. All three of the elements for this dessert can be made and enjoyed separately. However, when layered together they become a little bit magical. The layers of sweet soft marshmallowy meringue with its crisp outer shell and layered with sweet tart citrus, plum and berry flavours all work beautifully together. It is certainly decadent, but it is still quite light and not overfilling. You are a remarkable mix of talent and humility, humour and composure. You were always focused in a cook yet generous to work cohesively and respectfully with those around you. When we first entered the MC kitchen this season, I was so intimidated by you, but that changed and I absolutely left with so much admiration and respect for you! 15.01.2022 Roasted Cauliflower with Sunflower Seed ‘Hummus’. As many of us are now mindful and moving towards more sustainable habits of eating, this is a really approachable dish to make. It takes no longer than 10-15 mins of ‘hands on’ time to chop and dress the Cauliflower and make the ‘Hummus’. I think that as we make more conscious efforts to change our eating habits, it is certainly easier to make those changes when the measures are accessible in terms of ingredients, time and s...kills required. This recipe certainly ticks those boxes as it is simple in nature and execution, but it’s totally satisfying because you still get all the elements of a balanced dish through the textures of crunch & creaminess & the flavours of charred toasty nuttiness, acid, salt & spice. 09.01.2022 I posted this Roast Butternut & Maple cake with Walnut crust a couple of weeks ago. I put it out to everyone to see if people were in favour of a coffee or tea glaze. Well the people have spoken and the result is .... a hung jury!! The responses across the board were a tie between coffee lovers, tea lovers and swingers!! 07.01.2022 Placing a lasagne down in the middle of the table, gathering the family around, enjoying the time with a nice glass of vino, or maybe two. It’s always well worth the effort. This version is with a cauliflower bechamel. Lighter than traditional bechamel but so very tasty. If you are feeling inspired to cook it, the recipe is up on my website. 05.01.2022 Are you a strictly coffee person, are you tea person, or do you swing both ways? I have been trialing this Roast Butternut, Maple and Walnut Cake, but we have a hung jury in our house on which glaze to finish off the cake- a Coffee Glaze OR an Earl Grey Tea Glaze. Both worked really well. Personally I am a tea aficionado but I realise that many, if not most people love their coffee!! 05.01.2022 Fusilli with Kale and Walnut Pesto. Our families first go at rolling out Fusilli. Thank you for the inspiration @juliaostro ! Moving with the same philosophy as Julia and using what I have on hand in the kitchen and garden. Recipe For the Pesto 1 large handful kale- stems removed 1 large handful rocket... 1 bunch basil leaves 50g raw walnuts 1/2 garlic clove peeled and finely chopped 1/2 cup light olive oil Juice of 1 lemon 1 teaspoon salt flakes 50g Parmigiano Reggiano Place all ingredients in a blender and mix together - taste and adjust as needed. With the need to pivot, shimmy or wrangle the many challenges that 2020 has dealt. Earlier in the year I introduced my accommodation business Frond & Farro to you all. However, with the changes of the year we have had to adapt and revise. So for now the Frond & Farro as a name is being placed to the side as we work through our new structure and plans. In its place we introduce The Loft. There are still exciting things in the makings so stay tuned.
