A (MDZ): I would love people to understand we have been through a trying times and it continues. As a business we are continually having to adjust our practices, and staff are constantly getting new information to deal with. We are trying our best to ensure the visitor gets a great experien...ce in this new environment, so their continued patience is appreciated. Q: What do you find comforting in times like these? A (CDZ): For me it’s simple. Spending time with my wife and little girl and also, our bulldog Winnie. When things are open, I can be on a plane at least once a week travelling around the country seeing trade and talking all things DZ! A job which I love, and I am more grateful now than ever to be able to do. But when I get the chance (forced or not) I really love playing with my daughter and cooking with her. She is so much fun. During lockdown last time, I got to spend time that I would not have had because of travel and work. So, I like to look at the positives of lockdown and make the most of what I can. That is, time with loved ones. I also find comfort in cooking. I like to think of myself as ‘food athletic’. By that I mean. I love food. I love to cook, and I love to eat! All with a bottle of wine of course! The only downside to being home more than usually isI am driving my wife a bit crazy. It’s not a job, it’s a lifestyle. ... We were only nine months old in the first lockdown in March 2020 and people found us who hadn’t before, so that was a positive. During the second lockdown, it was harder for all of us. The novelty had worn off and it was a very long time, still we got great support. The Valentine’s day lockdown this year saw us work on minimising waste as we were prepped for a busy weekend and we used the most recent lockdown as a reset for us and had a break. I feel as if I’ve reopened or relaunched the restaurant 4 or 5 times over the last 18 months. My anxiety has definitely amped up; not because we’re not established but the fear of the unknown can be overwhelming. You keep wondergin, what are our restrictions ? How long will we be locked down this time? I would love the public to understand that our variables are fragile and can be volatile in lockdowns. What frustrates me is there can be a lack of empathy from some of the public, but in general, our community is wonderfully supportive.
