Zucchini Slice INGREDIENTS 5 eggs 150g (1 cup) self-raising flour, sifted... 375g zucchini, grated 1 large onion, finely chopped 200g rindless bacon, chopped 1 cup grated cheddar cheese 60ml (1/4 cup) vegetable oil NOTE: You can also add corn, capsicum or any other vegtable you feel like. METHOD Step 1 Preheat oven to 170C. Step 2 Beat the eggs in a large bowl until combined. Add the flour and beat until smooth, then add zucchini, onion, bacon, cheese and oil and stir to combine. Step 3 Grease and line a 30 x 20cm lamington pan. Pour into the prepared pan and bake in oven for 30 minutes or until cooked through. #cheaptuesday #easydinner #zucchinislice #anyonecanmakeit See more

11.01.2022 CREAMY COCONUT LENTIL CURRY Lentils are nutritious, cheap and delicious. It takes less than an hour (mostly hands-off time) INGREDIENTS 1 tablespoon coconut oil 1 tablespoon each: cumin seeds and coriander seeds... 1 head of garlic, chopped (1012 cloves) 1 can of crushed tomatoes 2 tablespoons ginger, chopped 1 tablespoon turmeric 2 teaspoons sea salt 1 cup dried brown lentils 12 teaspoons cayenne powder, optional 3 cups of water 1 400ml can coconut milk A few handfuls of cherry tomatoes 1 cup chopped corriander INSTRUCTIONS 1. Heat the coconut oil in a large pot or skillet over medium-high heat. Add the cumin and coriander seeds and toast until they start to brown, about 45 seconds. Add the garlic to the pot and let it brown, about 2 minutes. 2. Add the can of crushed tomatoes, ginger, turmeric, and sea salt to the pot and cook, stirring the pot a few times, for 5 minutes. Add the lentils and, if using, the cayenne powder, and the water to the pot and bring it to a boil. Reduce the heat to low, cover the pot, and let it simmer for 35-40 minutes, or until the lentils are soft. Stir the pot a few times to prevent the lentils from sticking to the bottom. If the curry starts to look dry, add an extra 1/2 1 cup of water. 3. Once the lentils are soft and the curry is thick, add the coconut milk and cherry tomatoes and bring the pot back to a simmer. Remove the pot from the heat and stir in the coriander. Serve with rice and/or roti See more

07.01.2022 If you love your gardening here on the North Coast, you will know that as it warms up lettuce" bolt" and go to seed quickly. Amaranth is a great substitute for warmer months. and the whole plant is edible. Amaranth leaves are nutritionally similar to beets, Swiss chard and spinach, but are superior as they contain three times more calcium and three times more niacin (vitamin B3) than spinach leaves. Or twenty times more calcium and seven times more iron than lettuce!!. Compar...ed to other grains amaranth seeds have a much higher content of the minerals calcium, magnesium, iron and of the amino acid lysine. (Grains are usually low in that, corn has none. Most people get their lysine from meat.) Amaranth seeds are also high in potassium, zinc, vitamins B and E and can contain over 20% protein (depending on the variety). 06.01.2022 Air Show Disaster at West SWICK'S ISLAND PARK , BELLEVILLE , ONTARIO , CANADA. AIRCRAFT HITS FOUR BUILDINGS This is tough to see. It just shows the dangers of attending these events. Amazing photo below shows great detail. ... The pilot at low level had no control over his aircraft. It narrowly misses a crowd gathered for the air show and slams into four buildings. One can only imagine the horror of the occupants inside those buildings. .............No one was killed, but it probably scared the %?#& out of them.

06.01.2022 As many of you are aware, Zare our massage therapist has been with us for 12 years. If you ever heard anyone singing in our clinic it was always Zare. She recently embarked on her clinical masters in Psychology at university in Toowomba. Unfortunately with Covid and travel restrictions she has found it increasingly difficult to be able to juggle all her commitments and family. We wish her all the best and hope to see her back when she completes her masters in a couple of years. She will be missed, and all the happiness she radiated.

03.01.2022 Serve up a golden roasted chicken with this simple one-tray bake recipe. INGREDIENTS 6 thyme sprigs, leaves picked 4 anchovies in oil, drained, chopped 2 teaspoons dried oregano... 1 teaspoon chilli flakes 2 tablespoons olive oil 2 garlic cloves, chopped Finely grated zest of 1 lemon 8 Free Range Chicken Thighs (bone in, skin on) 800g baby kipfler potatoes, halved lengthways 100g speck or streaky bacon, cut into 5mm-thick batons 250g baby truss tomatoes Cooks Note: You can add any vegetable in the pan, cauliflower and brocolli work well. METHOD 1. Preheat the oven to 200C. 2. Combine the thyme, anchovies, oregano, chilli, oil, garlic and lemon zest in a bowl. Add the chicken and turn to coat. Add the potatoes and toss to combine. Place on a large baking tray and scatter over the speck. Play 3. Cut the zested lemon into wedges and add to the tray. Season and roast for 40 minutes or until chicken is golden and potatoes tender. Remove from the oven and top with tomatoes. Roast for a further 10-15 minutes until tomatoes are blistered. 4. Squeeze over roasted lemon juice to serve. See more
