05.01.2022 This past week in the Chinese classroom, students have been making Chinese pork and cabbage pot stickers. Pot Stickers are called or in Chinese. Pot Stickers are Chinese dumplings that have crispy and well caramelised skin at the bottom, soft and tender skin on top and juicy filling within. Dumpling wrappers can be purchased from any good Asian Grocery Shop. Pot Stickers Pork and Cabbage Ingredients 50 to 60 dumpling wrappers... 250 g minced pork, with some fat 1/2 Chinese cabbage 4 tsp fresh grounded ginger 1 egg 1 tbsp cooking wine 1/2 tsp white pepper 1 tbsp light soy sauce 1 tbsp oyster sauce 2 tbsp hot oil 1/4 cup chopped scallion (spring onion) 2 tsp sesame oil Some water for wrapping dumplings Dipping Sauce 1 tablespoon soy sauce 1 teaspoon chilli oil (optional) 1 teaspoon sesame oil 12 teaspoon salt 1 tablespoon clean water 1 teaspoon roasted sesame seed Chopped scallion and coriander (optional) Instructions 1. In a mixing bowl, add ground pork, a small pinch of salt, ginger, egg, light soy sauce, white pepper and then oyster sauce. Mix well. 2. Then place the scallion on top and drizzle hot oil on green onions. This helps to improve the aroma of the green onion. 3. Stir the filling in one direction for 2-3 minutes until getting a paste texture and the filling becomes quite sticky and lighter in colour. Set aside for 1 hour or cover with plastic wrapper to leave in fridge overnight. 4. Finely chop Chinese cabbage and sprinkle salt all over. Leave for 10-20 minutes to draw out excess water. Drain out excess cabbage water. 5. Mix 2tsp of fresh ground ginger and 2 tbsp of sesame oil with cabbage. 6. Add cabbage mixture to pork mixture and mix well. 7. Place 1 heaped tsp of pork and cabbage mixture to the centre of each dumpling wrapper. Brush a little bit of water along the edge of each wrapper. Fold filled dumpling wrappers in half and press two sides together along the edges. Cover the sealed dumplings under wet tea towels. 8. Heat 1 tablespoon of oil in a pan (nonstick pan recommended for beginners). When hot, place the dumplings in with pleats side up and cover with a lid. 9. Cook over medium heat until one side becomes golden browned. Swirl around 1/4 cup of water and then cover the lid immediately. Continue cooking until all of the water is evaporated. 10. Cook over low heat until the bottom becomes crispy and golden brown. 11. Serve immediately with dipping sauce. See more

02.01.2022 Book Week Parade!

02.01.2022 Important Information! Thank you to the parents who have contacted the school regarding ticks. We do have a contractor coming once again into the school during the holiday to spray the oval and surrounding areas for ticks. Unfortunately this has become a problem this year because after the bush fires the kangaroos were struggling to find food, so a member or members of the community decided that there was plenty of grass on the school oval and cut the fencing to allow the ka...ngaroos in. This has happened three times this year, the consequences of this action have been a real problem. We had to combat the kangaroo droppings, the ticks and of course the students' safety with large kangaroos on the oval. I believe the problem of the fence cutting has stopped, the kangaroos are no longer coming onto the oval which has eliminated the droppings, but we are still combatting the ticks. See more
