23.01.2022 A little about our values and what drives us

22.01.2022 It's time to get planting, and we've got just the thing to get you started. The Urban Farm Goods team has started a seed library at Aranda. Here's how it works: 1. Grab a seed packet and an empty packet for later. 2. Grow the seeds in your garden. 3. Harvest the crop when it's ready, but let a few plants go to seed.... 4. Save and dry the seeds and pop them in the empty packet. 5. Label your packet with the plant info and grower's notes. 6. Return to the library for others to borrow. As the library grows we will learn more about which varieties thrive in this area and what conditions work best. With a goal to keep heritage seeds alive, encourage the community to keep planting and improve diversity in our gardens. You can find the library near the UFG products for sale at the Aranda cafe. So grab a seed packet and get involved

22.01.2022 It’s a common question asked when buying coffee beans for home, how can I keep this fresh? There are a few misconceptions still floating about, so check out our blog for our recommendations to keep your coffee tasting its best. https://www.twobeforeten.com.au/post/storing-coffee-at-home

21.01.2022 This Keep Australia Beautiful week is "Litter: Prevent the Spread". It's about the simple things all Australians can do in their daily lives to reduce their impact on the environment and encourage action. Our colourful waste sorting station at Aranda has taken a little getting used to, but it's great to see everyone now getting the hang of taking a few extra moments to think about where our waste ends up. It's a small task that can make a big impact when we all get involved. So thank you to all our dedicated customers and keep it up #KeepAustraliaBeautiful #sustainabilitymatters #reducereuserecycle #waronwaste #sustainablechoices #journeytozerowaste #lowimpactliving #breakfreefromplastic #welovescience #ecoconcious #sustainabledevelopmentgoals @ACTParks #ClimateAction @keepaustraliabeautiful

20.01.2022 It's been six years today since we moved into the old Aranda shops building and a lot has changed in that time. After the site sat empty for many years, we took on the challenge of renovating what was once an old grocers and butcher shop, turning the space into the Two Before Ten Cafe, Roastery, Bolt Bar and Illeso Studio. But the most exciting change is what's outside. Creating an Urban Farm had been a dream of ours for years. With the fruit trees now producing in abundance... and the vegetable gardens packed full of crops, the garden has become a little green sanctuary producing a huge amount of food for our cafes and #UrbanFarmGoods. There are still plenty of projects and changes to come, but looking back, we're pretty proud of what the Aranda shops have become, and how the community have come together to bring life to this little corner of Canberra.

20.01.2022 Little Oink at the Cook Shops have long been part of the TBT family. They use our Atlas blend to make delicious coffee and have a strong community of regulars who regard the little cafe as their go-to place for meeting friends. Have you had a chance to visit yet?

19.01.2022 Have you seen our busy bees at work in the native garden and urban farm? With the extra rain this year and these helpful pollinators doing their thing, the plants are thriving. Make sure to give the bees their space while buzzing about the garden, and keep an eye out for the first harvest of Aranda honey coming later this year

18.01.2022 If you've been missing our bags of used coffee grounds for your garden, fear not, they are still available! To further reduce excess packaging we're now tipping the grounds directly into a dedicated coffee grounds bins, adjacent to the courtyard in Aranda. BYO container and scoop in as much as you need for your home garden.

17.01.2022 The Kenya Mugaya AA as a single origin filter roast is clean and sweet, bringing notes of orange marmalade, chocolate and passionfruit with a buttery body. Region: Kirunda sub-location, Mutira location, Kerugoya division in Kirinyaga County Altitude: 1570 masl Process: Washed... Varietal: SL-34, Batian, Ruiru 11, SL-28 The Mutira Farmers’ Cooperative Society is made up of 924 members who own an average of 200 trees each. In line with the rising awareness on the need to conserve the environment, the factory has dug wastewater soak pits away from the water source, where it is allowed to soak in back to the soil. Farmers are encouraged to plant shade trees on their land and are paid some of the highest returns for their coffee. See more

17.01.2022 The world of specialty coffee has come a long way in recent years, opening up new regions and methods of traceability that weren’t possible before. It’s incredibly important to us that we use our buying power to support farmers and exporters who are reinvesting and making the extra effort to create and maintain sustainable systems for their local community and environment. Our purchasing patterns help shape the world, so we choose to purchase from people that do good. It’s not just about making consistently great tasting coffee, but considering everyone affected along the way. 16.01.2022 We’ve been buying coconut sugar from Kokonut Pacific HQ for four years now, using the sugar in our housemade chocolate mixture, sticky chai and brewed kombucha. The quality is excellent but it’s the values of the organisation that will keep us as customers for many years to come. Connecting more than 50 village units and creating income for over 1000 people across the Solomon Islands, Kokonut Pacific work with rural populations in tropical countries to help better their li...ves by improving their utilisation of coconuts. They provide extraction systems for communities to turn coconuts that would have otherwise been wasted due to inaccessibility into valuable product, creating a reliable income stream for those in remote areas. Their goal is to facilitate access and opportunity so that those who want to work can earn a living through trade over charity. 15.01.2022 Our recent mushroom workshop was a hit! Mushie growing expert Daniel Barrett hosted an afternoon of information and education on the amazing edible fungi. They covered foraging and identification, anatomy and spores, and the many alternative uses for fungi including leather, bricks and building materials. Participants learnt about the process of inoculation before getting hands on building their own shroom bags to take home. There'll be plenty more workshops coming up for the second half of the year - stay tuned for further info!

14.01.2022 Sourcing coffee from sustainable farms guides the creation of our coffee blends, and the Rwanda Nziza Women's Collective is an excellent example of an initiative that not only helps the vulnerable members of a community, but also tastes incredible. . Region: Kivu Lake Altitude: 1800 Process: Washed... Varietal: Bourbon Notes: Fig, butter, cinnamon, brown sugar, jasmine, stone fruit Used in: Poundcake Blend, Single Origin Filter . On the border of Congo, at the edge of Kivu Lake, there is a collective of 200 women who pick and bring cherry to the washing station. They are single mothers, or women who have gone through divorce, separation or isolation, most of them also surviving the genocide in 1994. Their coffee has a very unique flavour for the region. The Rwandan exporter of the Nziza women’s coffee ‘Land of a Thousand Hills’ is doing great work in the region, establishing a health clinic, nursery, Forgiveness School and helping with initiatives for wool production and nutrition programs for local children. As a not-for-profit, all the money ‘Land of a Thousand Hills’ makes from the sale of this coffee goes back into the community. . #coffeeorigin #sustainablefarming #firstcropcoffee #specialtycoffeeroasters #coffeestories #twobeforeten https://www.twobeforeten.com.au/post/nziza See more

13.01.2022 Today, Two Before Ten turns 12 We first opened in August 2008 as Enter Café - a standard little city café, selling coffee and gourmet sandwiches. We rebranded as Two Before Ten in 2011 when we began roasting our own coffee. After ‘popping up’ our 'Ten Yards' Regional Produce Restaurant and the 'Walt and Maz' Centenary Shipping Containers, and opening A. Baker in 2013, we spent 2014 moving to the Aranda Shops, which had been empty for almost two decades. The Aranda Shops pr...oject fundamentally changed the focus of Two Before Ten and clarified our purpose as a business. The revitalisation of the site relied heavily on support from the community and the re-use of materials from everywhere imaginable. The community are what made the project possible and they are what continue to make it worthwhile. So, now we are in business to build communities. We only work with people who share our values and support their community. For us, business is about engaging with our clients on product, service and knowledge to help them be as successful as possible so they may then give back to the communities that support them. Our approach is sustainable, in the broadest possible definition of that word. It’s not just about saving the planet; it’s about caring for its people our suppliers, our customers and our staff. The success of the Aranda project has allowed us to expand in recent years, opening in Canberra City, Canberra Airport, Brindabella Park and Greenway. Yet, the expansion we are most proud of is the number of our staff we have helped to open their own stores, including: JJ at Twelve Espresso in the City, Ruaidhri at Nomad_UC, Blake at The Front in Lyneham, and Tim and Tristan at Atlas on Hibberson in Gungahlin. Our Greenway site is a collaboration with Tim and Tristan. And finally, a quick shout out to the many Twobie employees who have gone on to do their own thing: Sam and Dan at Barrio Collective Coffee, Jack at Prism Coffee Co, Jarrod at Three Mills Bakery, Adam at Clementine Bakery, and Tony at Mozzarella & Co. They all helped make us what we are today. Helping people to help other people that seems like a good way to build the future.

12.01.2022 Ruli Mountain coffee comes from 2500 coffee farmers who live in several small communities tucked into the hills that surround the Ruli washing station. Run by ‘Gloriose’, this station is the first in Rwanda to have a female manager. Profits built the local Kiryamo school and farm on the hill above, and continue to go towards funding them. Eggs and milk from the farm are divided equally amongst families in the region and sheep wool sold internationally, strongly boosting the ...local economy. Since Land of a Thousand Hills started working in the area and investing in agronomy education, farmers are able to earn nearly double the price compared to previous years. Region: Kivu Lake Altitude: 2000 Process: Washed Varietal: Bourbon Notes: Grapefruit, apricot, honeydew, green apple, cola Used in: Sabertooth Blend, Single Origin Espresso

11.01.2022 Papua New Guinea's coffee has a distinctive flavour compared to other nearby regions, with bright and fruity notes accompanying a spicy, cocoa-like base. The PNG Kindeng we use in our Atlas and Sabertooth blends is deliciously complex, making it suitable for both light and darker roasts. Although small farms (called 'gardens') in PNG usually can’t afford organic certification, their traditional farming methods follow organic principles and longevity of arable land is of high ...importance to the country’s indigenous people. Washing during processing follows strict gauges and is used sparingly after natural fermentation has finished. This estate utilises shade-grown coffee to promote even ripening of coffee cherries and provide habitat for at least 90 species of birds. Region: Waghi Valley, Jiwaka Province, Western Highlands Altitude: 1500 Process: Washed Varietal: Bourbon, Catimor, Typica Notes: Cocoa, pear, brown sugar, mixed spice, black cherry, grapefruit Used in: Atlas Blend, Sabertooth Blend https://www.twobeforeten.com.au/post/kindeng

10.01.2022 Proteus Batch #45 is ideal for filter brewing. A combo of two natural processed micro-lots with flavour notes of orange marmalade, green grape and a smooth honey finish. The Costa Rica component is a Marsellesa bean from Volcan Azul. The Burundi Kirasa is a Bourbon varietal and the first year that this Akawa Project mill has tried natural processing, with spectacular results. We're loving this origin so keep an eye out for more info coming soon!

10.01.2022 We are lucky enough to have Greening Australia on board managing our Native Garden at Aranda, located behind our Mushroom Units in flight distance for our busy bees on the far east side of our block. The garden specially focuses on plants native to the Canberra region, and will soon be extending to circle the area around our bee hives, surrounding them with flowering natives. 10.01.2022 Repping Twobie coffee in Canberra's north is the very popular Atlas on Hibberson. They are tucked alongside Hibberson Street in Gungahlin with a cozy seating nook inside and general good vibes. They're open long hours every day of the week and keep an extensive retail coffee range to choose from. Even before opening their own cafe, Atlas' owners Tristan and Tim were part of the Two Before Ten team and the relationship has stayed strong over the years.

07.01.2022 One of the origins that make up our Juggernaut blend is the Guatemala Sierra Madre of the Union Cantinil smallholders farmers. It brings sweetness and syrupy body to the blend while contributing that nuttiness that goes so well in milky coffees. Region: Union Cantinil, Huehuetenango Altitude: 1700 Process: Washed... Varietal: Catuai, Bourbon, Caturra Notes: Maple, grape, chocolate, dried fruit, nuts Used in: Juggernaut blend Due to its remoteness, most producers in Huehuetenango process their own coffee. Luckily, an abundance of streams and rivers in the region makes fully washed processing more accessible. Farmers selectively hand pick cherry and pulp it on their farms, usually with small hand-powered or electric drum pulpers. Cherry is dry fermented for 24 to 72 hours. The high altitude means cooler weather, which often extends fermentation time. After fermenting, parchment is agitated to remove remaining mucilage and washed with clean water. All water used during pulping and washing will be filtered usually through earthen holes so that the organic solids do not contaminate local waterways. Farmers typically lay parchment to dry on raised beds that are stacked on top of each other to maximize space. Patios are also frequently used. By buying coffee from smallholders farmers in the Union Cantinil municipality in Sierra Madre we are supporting the work of Coffee Care who operate a not-for-profit in the region. Their projects focus on addressing necessities and concerns that farmers and the community identify in their daily lives. Some of the projects already underway include environmental awareness education for children, entrepreneurship programs for women, alternative income sources such as a community bakery, building infrastructure including 5 schools and a health clinic, and nutritional programs.

06.01.2022 Run by Hernan Dorronsoro Borrero who has dedicated his life to growing coffee, La Marianela Estate in Colombia is located between the volcanic mountains of Coconuncos and the Nevado del Huila. The land is covered with natural springs and creeks, creating ecological corridors that have allowed the growth and preservation of native trees and animals, generating environmentally friendly conditions among a sea of plantations. The estate’s commitment to sustainability saw them ...obtain Rainforest Alliance and UTZ certifications back in 2016, demonstrating the care and concern towards their workers and ecosystem. This delicious single origin coffee is an excellent example of how varying and complex Colombian coffees can be. It's been a staple in our Atlas blend for over 2 years and often makes an appearance in Proteus batches with its sweet notes and caramel-like body. Region: Cauca Altitude: 1650-1800 Process: Washed Varietal: Catimor Notes: Almond, orange, white chocolate Used in: Atlas Blend See more

06.01.2022 It's #NationalDogDay, and we'd like to dedicate it to some of our favourite regulars of the canine kind. Jasper , John & Julie have been coming to TBT Aranda since the very start when we were just a little trailer on Bandjalong Cres and we're still visited by them practically everyday. Jasper is pretty famous among staff but ridiculously camera shy. Oscar , Manfred , Amie & Rob are a welcome sight at TBT Greenway and even have their own instagram page @woof.im.a.dog. They ...were eagerly awaiting the opening of this venue across from their apartment complex and now drag along everyone they can for coffee and breakfast. As for the boys, they come for the salmon and stay for the pats! Bonus pic: this cutie called Gidget keeping snug in her coat @NationalDogDay

05.01.2022 The Heart Foundation have just published their case study of the Aranda Shops through Healthy Active by Design. This great initiative provides the best-available evidence, practical advice, checklists and case studies to help with the development of healthy neighbourhoods and communities that promote walking, cycling and an active public life. It's wonderful to be recognised by such a well-known institute and their other case studies are definitely worth a read too.

04.01.2022 If we had to name one person who has made Two Before Ten what it is today - it would be Jenna. Not just by what she has done, but by who she has been. In the last three years, Jenna has relentlessly driven us towards a vision we had held for many years but been unable to attain. Her unrelenting discipline and scientific approach has transformed us from a little hipster cafe into a legitimate speciality coffee company. And, in her classic way, she has left us a very long... ’to do list’ to achieve when she’s gone!! But now she’s leaving us for love! Her and Safar were to be married and living in Indonesia by now.but Covid has put a bit of a delay on those plans. So they’re embracing the van life and heading off for adventures in the hope the world will sort itself out while they’re gone. We will be forever indebted to the many things Jenna has done for our organisation, and she will forever hold a place in our big Twobie heart. We promise we will stay focused boss! We will miss you! 01.01.2022 Drinkers of Poundcake will probably recognise the strong fruity & berry-like characteristics that this natural-processed Ethiopian Guji brings to the blend. It's a favourite amongst our roasters and particularly special for being traceable down to the washing mill - an uncommon trait for Ethiopian coffees. Ethiopia is notorious for its complex coffee export process, discouraging smallholder coffee farmers to export their product. With the aim of improving this process, Dararo... Farmer’s Group was created to supply superior quality, traceable and unique micro lots directly from producers. Getu Bekele at G Broad works with private washing stations, private coffee exporters, coffee estates and out-growers to source high quality and traceable coffees in a very sustainable way and has been successful in assisting the smaller farms to complete the export process efficiently and in a cost effective manner. Region: Melkalati, Guji Zone Altitude: 1750-2100 Process: Natural Varietal: Mixed heirloom (Guji local landraces and JARC improved coffee varieties) Notes: Blueberry, strawberry, apple, floral, red grape Used in: Poundcake Blend, Single Origin Filter Roast
