24.01.2022 We are delighted to announce the return of our annual "Mushroom forage and lunch" in May/June, 2019. The day commences at 10am, followed by an educational presentation about all things mushrooms. We cover which ones to eat, how to pick, prepare, store and cook. We then forage for Mushrooms (lunch) and return to our campsite to prepare a mushroom pasta for lunch. Together we enjoy a delicious mushroom pasta paired with a glass of local wine. *PLEASE NOTE. This event is relia...nt on "Mother nature" to deliver rain and cold temperatures in order for the mushrooms to grow. If temperatures and rainfall are not adequate, mushrooms will NOT be available to pick. If this is the case, the event will be Cancelled with all tickets being fully REFUNDED. WHAT TO BRING Comfortable shoes for walking- Recommend: Runners, Boots and warm clothing. If raining we will still be running the event. Please dress appropriately. 17.01.2022 Korean sweet potato starch noodles boiled, chilled and then stir fried with ginger and pork mince. Fresh veggies tossed in and finished with bean shoots, white pepper and local Asian herbs and greens. A finishing sauce that blended light soy, fish sauce, and sesame oil to tie the dish together. Seriously delicious and enjoyed with a bottle of Thomas wines Reserve Braemore Semillon from the Hunter Valley. Delicious

Note....... do not refrigerate fresh tomatoes as the cold greatly dulls that great summer taste. Serve as a simple salad with basil leaves, fresh buffalo mozzarella and paper thin slices of Spanish onion, drizzled with EV olive oil and a few drops of quality balsamic vinegar. 13.01.2022 Asparagus - Goats Cheese - Caramelised Leek Tart... Method- prepare tart shell and blind bake. Allow to cool. Sauté two thinly sliced leeks in 75gms or so of butter with a sprigs of thyme. (Leaves only) cook until softened and slightly caramelised... add to tart shell top with goats cheese...& asparagus (blanched). Mix four eggs and 270ml of cream... season with salt and pepper. Pour over ingredients - grate fresh Parmesan and bake for 23 minutes on 180 degrees or until nicely browned.
