25.01.2022 Touchdown in Japan!
24.01.2022 We purchased these 330ml bottles way back in early 2006 for one of our first bottling runs of Cleansing Ale. Not what you'd describe as a raging commercial success, a fair bit of what was eventually sold was sent back (often accompanied by an "interesting" email). Not thrown out (nor were the emails!), the product was stored in our 3-sided open hay shed & largely forgotten, although continuous tasting over many years taught me a great deal about what I now know as wild fer...mentation & bottle maturation of ale. Seven years later - in 2014 - I finally plucked up the courage to decant these bottles (containing what I thought had become a pretty amazing and certainly very unique ale ... although, to be fair, I liked it way back in 2006, so what did or do I know??!!) to oak barrels ahead of re-bottling (in 750ml bottles) & re-presentation of the contents to the marketplace as our first ever special release "A Farmer's Resilience & the Seven Year Itch". Thankfully the market had also moved on by this time, and no bottles were returned! Many of you reading this will have encountered this particular product (& some of you have even recently written to me informing me that you still hold a bottle or two ... you lucky buggars!). After the initial decanting, the empty glass bottles eventually found their way back to the hay-shed in the endless game of tetrus that we play out here, managing the tight spaces in our brewery. Now, in January 2020, these very same bottles have again been brought into the cellar, this time for washing. Later this week they will be filled with the second incarnation of #FarmBarBeer, which will be soon available at #FarmBar only (ie, a cellar door only release) . A 14-year journey in glass and cause for a bit of fond reflection whilst I carry out what must be one of the worst, and certainly most tedious, bloody jobs I am faced with ... So get yourselves out to #FarmBar one day soon, grab yourselves a special beer which carries a stupidly small price-tag given how storied are the bottles & how labour-intensive the process ... 24.01.2022 15years in & I never tire of the sight & smells of spontaneous fermentation roaring into action once more as Tasmanian grown morello cherries contact the new season's farmhouse ales. The foam-over is certainly both visually evocative and aromatically beguiling but also serves a very important purging. Once the activity calms, the bungs are fitted, and these hogsheads are rolled onto stillages for the slow, rhythmic and enormously complex wave of subsequent fermentations over... two winters and a summer. It's a long process, a magical process, poetic even but not one that would be advised by sensible economic business types nor enjoyed by tightly-strung accountants. "Forester Wild Amber Farmhouse Ale by Two Metre Tall (2MT) Brewery I've tried the Derwent Aromatic Spelt Ale from this Australian brewer before, and it was a beauty. So is its amber cousin here, which I got from @templecellars. The use of wild yeast makes the beers from this Tasmanian brewery evolve with bottle aging. But I was thirsty and could not wait for it to develop further complexity haha. Sour and bracing, this is an excellent quaff. I would say this is like a wine among beers, and it goes well with rich food like the steak dinner that I cooked to eat with it. Its tartness cuts through the marbled beef to quench a thirst that you didn't even know you had. @burntends_sg is wise indeed to carry the Spelt Ale from 2MT, which has similar characteristics, to complement its deliciously decadent offerings. Just when you thought you had tried them all, here comes an Australian brewer to surprise you - in a good way - with its special brewing technique that will leave you marvelling at the magic that man can manifest from nature. In by far the most exciting news of 2020 (& potentially of all time!), today we loaded our first pallets, containing a treasured assortment from the 2MT range, for embarkation to Japan & subsequent distribution via @otahisato Vinaiota . I have long had a suspicion that our bone dry, acidic, complex, age-worthy, wild-fermented brews would sympathetically accompany what I have experienced of the breathtaking aromas, flavours & textures of Japanese cuisine.... . Meeting @otahisato on home soil at our farm last year was not only a great privilege & honour, it confirmed my gut-feeling; for example, Hisato's initial reaction - the sheer delight & immediate comprehension - to his first sip of (the admittedly rather bizarre!) Salty Sea Sour taken directly from its long slumber in oak barrels, was one of the most satisfying moments of my professional life! #nobloodyunderstatementshere . . 19.01.2022 How lucky we Tasmanians are to have @tmchugos! You mention offal to the populace these days and, at best, can hope to emerge with a look of absolute disgust. Yet offal is the "canary in the coalmine" of the modern meat industry. It's absence from the thoughts, diets & consciousness of a huge nationwide business which appears professional, dressed in a fancy suit & all powerful but excuses itself all too regularly from the table of reality to mop a palid brow, girdle spilling... obesity & cough the blood of poor health. From three steers sent to abattoir this month we recovered nearly 150kg of edible organs ... and we are yet a very long way from a full recovery. That's 30% of the weight of the so-called "edible" carcass of each animal. It is SO much food! The bloody liver alone is five times the weight of the entire eye filet! When did you last SEE liver in a shop? . Weighed down by boxes of "variety meat", I offered some to @dementedfermenter. We decided we'd split the tripe. You know, I've travelled about, I've eaten here & there, I've farmed, I've seen & smelt a few things ... but - and I'm not going to sugar coat this - tripe is as challenging as it gets! I scrubbed & salted (oh boy, it's not pleasant!). WTF. How on earth does this work. I contacted @dementedfermenter once more. His demenour was up. He was winning. I watched on in awe ... So, now, gaze back at the photo above. And please, don't you dare think "urggghh, tripe". Think of this year. Think of the animal. Think of the respect we owe what we do. Think of that enormous quantity of perfectly edible, unbelievably nutritious meat we never see. Think of the long history of offal consumption. Think of why we never see it now. Think of the human skills lost. Then think of that revoltingly wealthy but terminally sick-man that is today's industrial meat industry. Then go to @tmchugos. Order this tripe. And as you're eating, think just a small thought of appreciation for the likes of @dementedfermenter and the coterie of clever, dedicated specialty artisans interest, skill & passion like his attracts. Not simply a dish. It's a way of life and living. Turn up your nose at your peril!

14.01.2022 NEW PRODUCT ALERT: FORTH All Grain Ale (3.5% alc./vol.) Currently en route to wholesalers & retailers across Australia please be upstanding to welcome the first addition to our Tasmanian River Series Ales in 14-years and, yes, it is indeed the fourth ale in this series. Dedicated to & made using #organicallygrown grains & seeds - barley, oats, buckwheat, rye & quinoa - from the Forth River valley in north-western Tasmania by @kindredorganics, this ale is brewed with >50% unma...lted grains. The brew-nerds amongst you will instantly recognise the technical nightmare about to unfold in such a scenario, and yes, it was one helluva thing to deliver! The original idea was to find & express the natural aromatics & clean, clear flavours of carefully grown, freshly milled, #wildfermented #grain ... but, as the French might say "une belle idee, mais pas forcement une bonne idee!". It took all of what has accrued from a professional lifetime of fermenting things as well as a lot of sweating & swearing to coax this golden liquid to bottle ... The ale is also hop free! "But ale needs the bitterness from #hops to balance the sweetness from malt & grain right?" "Yes" ... "... ish!" So, here's the twist. (Yep, out here on our farm in Tasmania, there is always a twist!) Quinoa, the seed amongst grains, in it's natural state, is coated with a bitter phytochemical - complex molecules from the saponnin family - designed to offer protection from predation. Normally quinoa is washed prior to cooking in order to remove these compounds and render palatability ... unless you're a brewer with an over-active imagination, in which case this deliberate intent of mother nature can be reimagined and reincarnated as the bittering agent in a farmhouse brew! And it works! Gorgeously refreshing, exceedingly aromatic, exceptionally flavoured & a very modest 3.5% alcohol, I'm sure this may well re-open your mind as to the magic of grain, good farming and just how complex and delightful beer can be! Oh, and for the history buffs, #ale became #beer when hops were added. So this is emphatically, linguistically and historically very much an ale. All grain ale! Cheers!! See more

12.01.2022 NEW PRODUCT ALERT Original Sparkling Mead, 2017 . Get excited! Get VERY excited!!... Knowing this was coming for some time, I've recently coined the phrase ... . "Mead IS the future" . For those familiar with Mead, forget what you know! For those who don't know Mead, welcome! . Now to this product ... The concept of "terroir" is bandied about, particularly in the wine industry, but increasingly across many aspects of food & beverage, and, like an oft' tried jumper from Vinnies, the fit is becoming looser, the original design perhaps not as sharp ... . In 30-years of fermentation I have never been moved by delivery of the concept of terroir quite like I've experienced in making this very special beverage ... . Harvested by bees located on our farm, the raw, whole #honey - the starting ingredient for this product - is emphatically and specifically from whatever was flowering on our farm in November & December 2016! . We simply dissolved this honey in water from the River Derwent, which cascades around our farm, in rapids, on three sides. . A spontaneous wild ferment was allowed to commence & run it's complex, ever-varied course for 3 long years, then, by a simple addition of honey, the bottle conditioning (ie the sparkling bubbles!) also results from completely spontaneous fermentation. Me, the brewer, did very little in fact. Mostly I simply stood by and watched in awe! . You can't possibly get more "made by nature"! Bless the #bees! That's #terroir! . Exhuberantly sparkling, bone-crunchingly dry but overflowing with ebullient aromatics of wildflowers, pollen, hay, (... earth, wind, fire, the whole fucking lot!) this beverage expresses itself absolutely and utterly as a statement of a very specific time in a very specific place. . 12.01.2022 September 1st, 2020 & filling our first kegs for year ... #strangetimes2020 #everylittlepositivehelps . ... and for the brew nerds reading, yes it's spears out for the wash here, and as all of our ales, ciders & meads are fermented in the keg (ie #kegconditioned) the spear acts like as soft-spile/hard-spile does on a real ale cask. It's kinda like the keg version of being the best self they can be! . A lot of people ask us "why handpumps?". You'll never really understand unti...l you actually taste cask-conditioned ale from a handpump ... it's textural. And whilst it's all molecular CO2 we're talking about, for us there is simply no comparison between fermentation derived saturation & forced carbonation. I could bang on for hours; partial pressure, bubble size, biological compatibility, membranes ... but, doubtless, you've got better things to do and I need to get back to these kegs! . 09.01.2022 Open for business! You know, there's a lot about right now that has been cause for a great deal of reflection. . Causative pandemic aside, there are a lot of things about the current situation - the whole stay at home, slow down, look locally - that might resonate for those who may have ruminated on how we live versus how we might otherwise live .... . To that end I have often remarked about the incongruous fact that, as a small manufacturing business located in regional Tasmania, you are more likely to find our products in Singapore, or the USA than in our own home town of New Norfolk. . Further, if each beer/cider-drinking adult from the Derwent Valley region replaced one bottle per week of their currently consumed beverages with a bottle of TwoMetreTall, the reality is that would instantly fill our capacity & we would be unable to even supply Hobart. . Therefore, whilst we thank our lucky stars that we live in the Derwent Valley, Tasmania (every bloody day, not just in times of global pandemic), we are also sincerely thankful to the "global village" for providing for our existence. . But suddenly there is a disjuncture! . How was what sustained us yesterday even possible today? . And where-the-hell did that come from?? . Could the answer seriously be all around us?? . 08.01.2022 To be honest the way things have unfolded this week I've had moments wondering if we'd ever sell another beer ... but, wrestling myself from these momentary mental funks, we're keeping informed, spatially distancing and we're just going to keep ourselves busy ... ... & keep on bloody brewing! You see, the thing about farming & brewing is that there is ALWAYS so much work to do, even if everything else stops ... and, in any case, most small business owners - farmers, in parti...cular - are all a bit habituated to the concept of risk, uncertainty & income droughts. ... so fuck it, here is a brand new project in production, to be released in April, (assuming someone is still buying beer next month!) We haven't added to our Tasmanian River Series (Derwent, Forester & Huon Dark Apple for those in the know) in the 15 years since we began, but are working on a new addition. It is conceptually fascinating - a beautiful idea - but practically it is really challenging me; technically difficult & is drawing on all of my experience & problem-solving resources. But I think I'm winning. And that feels good! So, stay tuned ... more to come! In the meantime, do take this CoVid19 seriously. 08.01.2022 A magnificent aerial perspective of our farm on the River Derwent in Southern Tasmania, situated 11km upriver from New Norfolk. . @agrariankitcheneatery uncovered & posted this amazing photo courtesy of @wanderingfoxbat yesterday, offering a remarkable perspective on our home & workplace. . Brings to mind a couple of points:... 1. The water of the river flows around our boundary on three sides & Mt Belmont sits (out of shot) on the "fourth side", to the north. It provides for our own, very special "environment". The River Derwent is a relatively short, fast flowing waterway originating at the spectacular Lake St Clair and is the water source for all of our farmhouse #ale & #mead 2. You can appreciate the sharp contours of the land from this photo. We have great views and it's such a charismatic beautiful landscape, but after roaming these sharp inclines & gullies for 16-years chasing misbehaving cattle I all of a sudden appreciate why I need a new hip! 3. With our modern digital lives, coupled with drones & photographers roaming the sky, all of a sudden - and weirdly - I appreciate the reality that whilst this technology permits us to do what we do from our remote location it also means we are no longer ever alone, even when there appears to be absolutely no-one around . 06.01.2022 Every day, every barrel, every tank springs a delightful surprise in the magic & beauty of wild flor. . This one from a tank of 2018 cider (our current vintage) headed to keg & bottle. . We wild ferment our cider, then mature it on the naturally occurring lactic-acid bacterial lees (most probably pedicoccus dominant) for at least 12-months which we consider vital for structure, line & length of the beverage.... . The weird thing is our cider is more "fruity" at the end of this rather long 2-year process than it is following primary fermentation (the point at which most conventional ciders on the market would be considered ready for bottling). . But wild fermentation is a completely different, time consuming game; not for the impatient, not for the accountants & not for those not ready to appreciate the utter joy of all the myriad textures, films, shapes & bubbles it all throws our way along this ever-changing, unceasingly fascinating road we wend. . #artisan #wildfermented #wild #flor #farmhouse #ale #beer #cider #mead See more

04.01.2022 Yeah, I hear you, it can certainly be very difficult at times to find our products, even in your favourite independent bar or bottle-o ... But! We're always here, at our home, on a farm in Tasmania and we have a website, an excellent online shop, a mailing list to sign up to for a "heads-up" pre-empting of our seasonal releases and, if you're lucky enough to get to our beautiful island home, @jane_huntington & myself open our Farm Bar & personally greet visitors 5-days/week.... You see we consider ourselves an artisan brewery, not a production brewery. Using time honoured, slow wild fermentation our products are not available to schedule, demand, nor fashion they are available when they are ready and for as long as they last. It's not teams of people, replete with sales & marketing departments, production hierarchies & social media management. It's Jane, myself and, when here & needed, our daughters and lots & lots of dedicated labour-of-love. So, when thinking of your food, beverage, and wow, maybe even travel adventures in 2021, please keep us in mind.
