15.01.2022 Well it has been a busy couple of days. A full on week at school coupled with a forgotten ingredient in a cake meaning a rebake. Anyway, this white chocolate mud cake laden with all the goodies and a custom topper to go on tonight, went out this morning. This afternoon has been all about making Harry Potter inspired cake toppers for a chocolate mud cake for mid next week. Oh! And I had to remake a pajaki for one of my school kids who’s own Mother’s Day gift pajaki was mistakenly taken home early by someone else. time for a wine. cheers.

12.01.2022 One of the things I learned when I started decorating cakes for my son was the benefits of a crumb coat. What on earth is that????? It’s a thin coat of buttercream all over the outside of your cake that traps all those pesky crumbs and stops them from getting into your top layer of buttercream. If you are trying to get a smooth outer layer, stack, fill and then crumb coat and scrape back until it is pretty smooth. Then put this in the fridge to set. Take it out and do your top coat. Easy!
