11.01.2022 This is Remi and he is now working full-time with @uminono_melbourne - Many of you heard about Remi but the guy deserves a post: Remi spent 14 years in hospitality, from Michelin starred restaurants back home to modern Australian (sous-chef at @transport_hotel for the last 5 years). His creativity and ability to mix French techniques with Asian flavour is exactly the kind of mind that helps Uminono to go forward!... - This guy is a master of the organisation!! Honestly, while I spend my day dreaming about the future of Uminono and talking with you guys, he is the head behind the every day operations - Outside the kitchen, he brews a mean Belgium style beer, loves climbing and recently loves our "business meetings" on the sea. Most important, we were friends before coming to Australia, we have been housemates for 5 years and we have big plans together for @uminono_melbourne !! Still no Japanese staff in the team, but hey!
