21.01.2022 Why did we choose the name The Underground Fish Co? Well it stems back to the origins of Gravalax/Gravlax/Gravadlax! During the Middle Ages, gravlax was made by fishermen, who salted salmon & lightly fermented it by burying it in the sand above the high-tide line. The word gravlax comes from the Scandinavian word grva/grave, to dig and lax/laks, salmon.
