23.01.2022 Good news - it's Friday!!! Sounds like the perfect excuse to whip up this delicious Pale-Ale Pizza that so many of you devoured at our stall during O Week. Here's the recipe in case you missed it: Pale Ale Pizza Dough Makes 3-4 medium pizza bases... Prep time: 30mins + 1-2hrs proving time Cook time: 15 mins Ingredients: - 300mL Pale Ale - 7g dry yeast - 2cups plain flour - A good pinch of sea salt and pepper - 3 tbs olive oil - Toppings - we love lots of veggies (think capsicum, mushrooms, pumpkin, tomato, eggplant, zucchini or whatever else you've got in the fridge) with a bit of chicken or pepperoni, olives and cheese. 1. Place bottle of Pale Ale in a jug of hot water for a few minutes until the beer becomes warm but not hot. 2. In a mixing bowl add the yeast and beer and mix until well combined. 3. In a separate bowl mix together the flour, salt and pepper. Gradually add the beer mixture to the flour, then the olive oil. 4. Once combined knead the mixture on a floured bench until the dough is smooth and elastic. 5. Form the dough into a ball and put in a bowl, cover with cling wrap and place in a warm dark place for 1-2 hours or until the dough has doubled in size. 6. When the dough has doubled in size, use your fist to knock back the dough, and then divide into 3-4 portions (approximately 200g each). 7. Preheat oven to 200C. 8. Roll each portion on a floured surface to desired thickness and diameter. Place pizza bases on lightly oiled pizza trays. 9. Spread pizza with tomato paste, pesto or any other favourite spread 10. Top bases with your choice of toppings. 11. Cook in hot oven for 15-20minutes until crisp and golden. 12. Top pizzas with rocket and drizzle with olive if desired. Serve immediately. We recommend enjoying a slice of pizza and sipping on some left over pale-ale for the perfect way to kick off the weekend ;)

Throw together a few of your favourite veggies, toss in some legumes (chickpeas are great!), a drizzle of olive oil, your favourite herbs and voila! 17.01.2022 Check out this chickpea curry adapted from the USC cookbook! We'll be running a cooking demonstration for this dish (along with a few others) complete with free tastings and recipe cards during orientation week at USC. On a side not, the leftovers from this curry are just as good (if not, better) the next day for lunch as the flavours really get a chance to infuse through the dish. Plus, you'll save money not having to buy lunch elsewhere. Winning!

16.01.2022 It's meat-free Monday! Here's a vegetarian recipe from the USC cookbook that's cheap, easy to prepare and gluten-free! Whip this Vegetable Frittata up in under half an hour and serve up with a side-salad for a delicious and guilt-free dinner. What's your favourite vegetarian dish? Ingredients: 1tbs oil red capsicum, diced... green capsicum, diced brown onion, diced 6 button mushrooms, sliced 6 eggs 40g feta cheese, crumbled 1 medium tomato, sliced 1 cup basil, chopped 1 cup coriander, chopped 50g feta cheese, extra to sprinkle on top Method: 1. Preheat oven grill. 2. Add oil to large oven proof frypan and heat over medium-high heat. 3. Add red and green capsicum, onion and mushrooms and cook until tender. 4. Meanwhile in a small bowl whisk eggs and feta cheese together. 5. Add egg mixture to vegetables and allow to cook for 5 minutes. 6. Place tomato slices over partially cooked frittata and sprinkle with basil, coriander and extra feta cheese. 7. Place frittata under oven grill for 5minutes or until frittata is browned and set.

05.01.2022 Congratulations to Cassie and Bianca who both won DIY herb-growing kits from our stall at Orientation week and a big thanks to everyone that stopped by to fill in a form, taste the food and grab a recipe card. 04.01.2022 {DID YOU KNOW?} - more than 5% of the Australian population are food insecure - food insecurity occurs when people don’t have sufficient food, experience hunger as a result of running out of food and being unable to afford more, rely on food relief, are anxious about acquiring food, or eat a poor quality diet as a result of limited food options - university students are an at-risk group due to: -> low income ... -> living out of home -> limited cooking skills/knowledge (2minute noodles AGAIN?) -> time constraints (between studying and "enjoying the university experience" there's little time left to shop, cook and eat) The USC Cookbook aims to address these issues by providing healthy recipes that are quick, cheap and easy to make. 02.01.2022 Day 1, Week 1 of Semester 1 2014 at USC. Feeling excited? Nervous? Apprehensive? Don't forget to kickstart your morning with a healthy breakfast to keep you focused throughout the day (no one wants to be the first to fall asleep in a COR109 lecture!). Here's a recipe for an easy bircher muesli full of slow-release carbohydrates to keep concentration levels high and protein to keep hunger at bay (no one wants to be the one whose stomach is growling all through the chemistry le...cture either!): Serves: 4 Prep time: 10 mins Refrigeration time: Overnight 2 cups rolled oats cup of apple juice 1 apple, grated cup natural yoghurt cup frozen mixed berries cups of chopped up nuts (walnuts, almonds, sunflower seeds) 1. Combine oats, apple juice, seeds and nuts in a large bowl and refrigerate overnight 2. When ready to eat mix through yoghurt and mixed berries. Hint: serve with a drizzle of honey and sprinkle of cinnamon for extra flavour. You can make up a batch at the start of the week for a quick easy breakfast.
