20.01.2022 I yearned for this bat as an 11yr old on the back of Deano’s performances and status for Australia in the mid 90s Whilst it didn’t lift me to the same heights as my hero, it supplied a brash confidence to my younger self and an unwarranted desire to influence the game as much as Deano did. 27years later, it slogs balls at the height of summer in coolroom cricket at the brewery, & still lofts straight drives in the backyard with the next generation #RIPDeano

20.01.2022 # Australian Spontaneous Ale, aged with fresh Mulberry fruit. A Lambic-inspired fruit beer, mellowed for almost three years in oak barrels. It strikes the perfect balance of Lambic-inspired sourness with summer berry aromas & flavors... The beer pours a rich shade of sunset pink with great clarity and an intentionally low carbonation, resulting in almost no head formation. The aroma is intense, rich mulberry with a light lactic undertone and notes of leather, hay and new oak, and as the beer warms up the oak develops into a subtle almond character & red grape notes. The flavor is similarly intense, bold summer berry, with moderate lactic sourness and a contrasting light sweetness; a light leather funkiness contributes to the complexity. The beer finishes lightly tart with rich, ripe mulberries and a sour-over-sweet balance. While this beer is not as funky as some traditional Belgian Lambics, the sourness is prominent yet kept in check by a subtle fruit sweetness. The mulberry character is reminiscent of a summer afternoon picking the fruit fresh from the tree (minus the blood red stains), with both a very rich and fresh character being maintained across the palate. 18.01.2022 ’ ! Naming beers after children seemed like a great idea initially - until the pertinent question always reared it’s head - What’s your favourite (beer)? Unashamedly it’s Max - largely because it’s the realisation of a dream, and the fruition of a largely simplistic goal - to produce a beer produced entirely from our own land. 16.01.2022 We’re conducting some small scale barley varietal trials at the moment, with the hope to add them to our planting plan for 2021, and subsequent malting and brewing with at the brewery. We’re always striving to use better/tastier ingredients to compliment our ground-to-glass philosophy. All of these are heritage varieties, and most are no longer grown on a commercial scale, having been well & truly superseded by higher yielding cultivars. Our recent new release - Here We Go Round The Mulberry Bush - is an Australian Spontaneous Ale, aged with fresh Mulberry fruit. It could be someone with a splinter or someone who’s heart has stopped. No matter what, it keeps me on my toes and we really have a chance to make a difference. COVID-19 has definitely changed how we operate. From the layout of the department, to wearing full PPE all shift, it’s been quite a challenge to adjust and it has slowed things down quite a bit. 02.01.2022 #FarmhouseFriday I thought I’d provide some context for where we produce our beers, rather than a particular beer this week. This is us. Based on the family farm, nestled amongst 100 year old Oak trees, and completely surrounded by the land with which we product brewing ingredients.... All of the paddocks in shot have grown us barley for malting with over the past five years. In two of the paddocks, we’ve harvested wheat and oats, again for brewing with. The hopfield is just out of shot to the left of the brewery Our spring water is captured from a capture tank just out of shot to the right. You can see the solar panels that do an incredible job in powering us at bottom right, and our waste water system is just to the downside of the brewery, that ends up pumping its treated water onto the eucalypt plantation to the right of the picture. What you can’t see are the 400 odd ewes and their lambs that are in the paddocks on the hill to the right, that are keeping us busy at the moment. And the two little pigs (Karen & Darren) that are rummaging around now to the bottom of the photo. It’s a completely integrated system, that works because we understand how each element can impact and effect another area of the farm. The fact that we produce beers from the land is a bonus, and a tangible reward that a holistically ground to glass methodology works. Cheers to that, & enjoy the weekend - Will

Casually rested in oak puncheons with Brettanomyces wild yeast for 18months, the trademark funky and hay like notes pair incredibly with a bevy of citrus, pineapple, and passion fruit aromas from the dry hopped Galaxy & Enigma hops - in barrel. A touch of coloured malt brings a sunset orange hue & subtle grainy character into play arranging balance amongst the floral barrage.
