24.01.2022 It has been so cold in Melbourne! If you receive your vanilla with white specks, do not worry! This is crystallised vanillin. This usually occurs when it is particularly cold but is completely fine and doesn’t damage the vanilla pod. To check it is crystallised vanillin, when you touch it, it should go away and leave a brown residue on your fingers - this is the vanillin and is what gives the vanilla its distinct flavour.
