That's why we got our chefs to create a whole batch of new recipes to get you inspired for #meatfreemonday These beauties are Singapore Chili Meatballs and you're going to want to make more than one batch! Ingredients 2 pouches of vEEF patties (you can get 2 for $10 at Woolies online right now) 1 Large Clove of Garlic... 1 Medium Shallot Small Red Chili (Bird's Eye) Cayenne Red Chili 1 Thumb of Ginger 1 tsp Dark Miso Paste 1 Tomato Grated 2 tbsp Sweet Chili Sauce 80g Tomato Puree Vegetable Stock 150ml To Garnish Fresh Coriander Green Shallots Method Meatballs 1. Shape de-frosted vEEF patties into 10 meatballs Singapore Chili Sauce 1. In a food processor blitz garlic, shallot, small red chili, cayenne chili, ginger, miso and grated tomato into a paste. 2. In a pot, add 2-3 tbsp of vegetable oil and saute the paste until it changes colour. 3. Add the tomato puree and the sweet chili sauce & simmer for 5 minutes. 4. Add the meatballs and cook in the sauce for 5 to 7 minutes. (The sauce should be simmering, not boiling) 5. Garnish with fresh Coriander and green shallots.

Their goal was to Trek to Everest Base Camp but like a lot of things in 2020, that plan was changed by COVID and now they will be climbing Mt Coolum 8 times a day for 5 days instead !
