24.01.2022 I make this version of Huevos Rancheros a lot - cherry tomatoes are super sweet at the moment, the eggs cook perfectly, and only one pan to wash! * 1 clove diced garlic * .5 red onion (sliced) * 400g cherry tomatoes (halved) * 2 eggs... * 200g cooked brown lentils * 1 tbs smoked paprika * chopped herbs (if handy) - sautée garlic and onion in medium frypan for 5 minutes - add paprika, salt & pepper (to taste) cook for another 2 mins - add tomatoes & lentils, simmer for 5 mins - turn heat to low, make two holes in the sauce & crack egg into each hole - pop lid on and cook for exactly 5 minutes - serve with guacamole and warm tortillas (or eat on its own!) 23.01.2022 You can't get much more Australian than COLESLAW - this version is super crunchy and make with natural yoghurt instead of mayonnaise: * 1/4 shredded cabbage * 2 grated carrots * 1/2 slices red onion * Half bunch chopped chives... * 1 red apple (matchsticks) * 1 cup natural yoghurt * 1 tbs whole grain mustard * 2 tbs red wine vinegar * Juice from 1 lemon * Salt & pepper - Mix dressing ingredients together then tip over salad - Top with toasted seeds/nuts for extra crunch See more
23.01.2022 Did you know many vegetable bases will regrow to form new plants? Make sure you have a clean cut, then arrange your pieces in a shallow layer of water in a tray & sit somewhere warm & bright - new sprouts will start to appear after a week or so. Let's see how the pak choy, carrots & celery go over the next few weeks :)

22.01.2022 After visiting a friend today who's son has just been diagnosed with coeliac disease I thought I'd give this recipe for Apple & Coconut Bread a try - coconut flour is gluten free and a good source of fibre: * 1 diced apple * 1/2 cup berries (fresh/frozen) * Zest of 1 lemon * 3 eggs... * 1/2 cup coconut flour * 1/2 cup desiccated coconut * 1 tsp ground ginger * 1 cup natural yoghurt * 1/4 cup honey * Pinch salt * 1/2 tsp vanilla extract * 1 tsp bi-carb soda - Combine flour, zest, coconut & ginger - Mix in eggs, then yoghurt, vanilla & honey - Add remaining dry ingredients and mix well - Fold through berries - Bake in loaf tin for 35 mins @ 175C then cover foil and cook for additional 10mins - Allow to cool See more
20.01.2022 The humble carrot has so many uses, this recipe is one of my favourites. Low-Fat CARROT Cake: *2 cups grated carrot *400g diced pineapple or other juicy fruit (nectarine, pear etc) *1 cup plain flour... *1 cup w'meal flour *2 tsp baking soda * 1 tsp cinnamon, .5tsp allspice & .25 tsp nutmeg * 4 egg whites * .5 cup sugar substitute * 1 cup applesauce * .5 cup low fat buttermilk * 1 tsp vanilla extract * .5 cup raisins * .5 cup chopped walnuts - combine all dry ingredients - beat egg whites until soft peaks form then add sugar substitute and wet ingredients - add wet mix to dry mix, stir in remaining ingredients - cook at 180 degrees for 35mins Frosting (the best bit!!) - Beat 1 cup cream cheese, 1 cup sugar substitute, 1 tsp lemon juice & .5tsp vanilla extract together - decorate with dried apricots, coconut & walnuts See more
18.01.2022 What to make for a mum who finds traditional fruit cake too heavy? PUMPKIN Fruit Cake! * 300g mashed & cooled pumpkin * 675g dried mixed fruit * zest of 1 orange * 300ml mango/apricot juice... * 250g self raising flour * 1.5tsp mixed spice * 1tsp bicarbonate soda * mixed seeds * 80ml Cointreau/sherry - Simmer dried fruit, juice & zest for 5mins then cool - Mix in mashed pumpkin, then add dry ingredients & stir until combined - Pour batter into lined cake tin & sprinkle with seeds - Cook @ 150C for 80-90mins - Remove from oven, pour liqueur evenly over cake - Allow to cool in tin See more

16.01.2022 I love this recipe for Zucchini Pizza - it's low carb, nutrient rich and tasty: * 6 grated zucchini * 2 cloves crushed garlic * 1 egg * 1 cup grated parmesan ... * 2/3 cup wholemeal flour * 1 tbs chopped oregano * Salt & pepper - mix all ingredients together - divide mixture between 2 greased oven trays lined with non-stick paper - spread out to form 22cm circle - cook at 180degrees until golden (35-40 mins) - finish with your favourite toppings (try pesto, tomato, ricotta & basil) See more
15.01.2022 Just 8 ingredients are required to make this delicious CARROT, Cumin & ORANGE Soup: * 1 kg peeled & chopped carrots * 2 finely chopped onions * 2 oranges * 2 tbs herbs (I used chives)... * 1 L vegetable/chicken stock * 2 tsp chopped garlic * 2 tsp ground cumin * Salt, pepper & chilli flakes to taste - Sauté onion & garlic in large saucepan for 3 mins - Add carrot, cumin & chilli flakes then cook until just soft (5 mins or so) - Add stock & 4 strips of orange rind then simmer for 20 mins - Remove rind, purée until smooth - Add juice from both oranges - Cook for further 2 mins - Season, top with herbs & serve See more

09.01.2022 Local navel ORANGES are now in season and absolutely delicious when caramelised in this Quinoa, Carrot & Spiced Orange Salad: * 2 sliced oranges * 1 grated carrot * Handful chopped herbs * Juice of .5 lemon... * 1 clove crushed garlic * Mixed leaves (optional) * One cup quinoa * 1 tsp each of fennel seeds, cumin seeds & chilli flakes * 1 tsp honey * 4 tbs olive oil - Coat orange slices with spice mix, honey & olive oil - Roast on oven tray for 20mins @ 220 degrees - Cook quinoa according to instructions then add garlic & lemon juice - Assemble salad then season with salt & pepper See more

Long weekend breakfast - there's only two ingredients in these high-protein pancakes & no need to wait for the batter to rest: * 120g oats * 400ml egg white - blitz in food processor/NutriBullet until smooth then pour batter straight into the frypan (makes 6) - layer with yoghurt, berries, caramelised apple, banana and crumbled walnuts

06.01.2022 My first attempt at a raw recipe, MUSHROOM & HERB Balls - quick to prepare and no frypan or oven dish to wash up! * 250g mushrooms * 1 cup thawed peas * 1/4 cup chopped coriander * 1/2 tsp ground coriander... * 1 cup almond meal * 2 tbs tahini * 1/4 cup sesame seeds * Lettuce cups * Salsa to garnish - Process first 6 ingredients in food processor until finely chopped then roll into 12 portions - Roll in sesame seeds then refrigerate for 10 mins - Serve on lettuce cups topped with your favourite salsa See more
05.01.2022 This week's seasonal box contained grapes, nectarines, celery & spring onions - add some quinoa and you've got a delicious salad: * 1 cup white quinoa * 2 cups grapes (or currants) * 4 stalks celery, sliced in bias * 4 sliced spring onions... * 2 sliced spring onions * .5 cup toasted nuts/seeds * 80g feta (optional) * .25 cup each olive oil, white wine vinegar & orange juice (mixed together) - Toast quinoa in saucepan for 3 mins then simmer with 1.25 cups water/stock for 15 mins - Soften grapes in frypan for 10 mins over medium heat - Coat spring onions & celery with vinaigrette then add all remaining ingredients - Season with salt & pepper See more
03.01.2022 After trying Okonomiyaki (Japanese savoury pancake) at a food market I thought I'd give them a try at home - the word okonomi means 'what you like' so this is a great recipe to clean out your crisper: * half cabbage (shredded) * 3 grated carrots * 5 shredded kale leaves * 3 sliced spring onions ... * half cup plain flour * 2 tbs corn flour * 2 eggs, whisked with 1 tbs water * 270g pit udon noodles * 1/3 cup tomato sauce * 2 tbs Worcestershire sauce * 1 tbs mirin * 2 tsp honey * 1 tsp Dijon mustard - combine last 5 ingredients to make sauce, set aside - add flours to prepared vegetables, combine then add egg mix - cook 1/2 cup quantities of pancake mixture in non-stick frypan until brown (approx 3 mins on each side) - serve pancakes on top of prepared noodles, drizzle with dressing See more

The addition of SWEET POTATO in this Dahl recipe makes it a hearty meal in itself: * 1 cup diced sweet potato * 1 cup/can diced tomatoes * 375d dried red lentils * 1 cup coconut milk... * 1 tbs minced garlic * 1 tbs minced ginger * 1 tbs curry powder * 2 cups stock * 1 bay leaf * 1 cinnamon stick * 1 tsp salt * 2 cups spinach leaves - put all ingredients in slow cooker, mix well & cook on low for 6-7 hours - stir through spinach before serving - serve with flatbread or papadums See more

It sure is, and you can mix in any combination of vegetables you have on hand: * 3 cups grated cauliflower * 250g peeled prawns * 1 chopped onion * 2 garlic with cloves, diced ... * 2 sliced celery stalks * 1 head Brocolli cut into florets * 1 diced carrot * Corn kernels from 1 cob * 4 sliced spring onions * 2 eggs, lightly beaten * 2 tbsp soy sauce * 1 tsp Chinese five-spice - Scramble eggs until cooked through then transfer to a bowl - Sautéed onion & garlic for 4 mins - Add all vegetables and stir-fry until almost tender - Add five-spice, stir to combine then add egg back into frypan and stir-fry for additional 3 mins - Pour in soy sauce and spring onions, stir to combine then serve See more
01.01.2022 If your household lives on mashed potato (I make mash about 5 times a week...) polenta with roasted CORN is a great alternative - the texture is similar, it's just as tasty & is quick to prepare: * 2 heads corn * handful sliced spring onions * 100g medium ground polenta * 400ml milk + 400ml water... * 50g butter (optional) * 60g Parmesan (optional) * sea salt & pepper - cut corn from cobs, toast in frypan for 5 mins - boil milk + water in saucepan (or frypan used for the corn) - drizzle in polenta stirring vigorously with wooden spoon - reduce heat, cook for 6 mins - remove from heat, stir through butter, Parmesan, spring onions & seasoning - mix corn through polenta & serve See more
