18.01.2022 Well gosh darn! I've dusted off the blog for a quick vegetarian meal, perfect for meat-adverse teenage girls, meat-loving tweenage boys and everyone in between...

18.01.2022 My new favourite 15-minute dinner. Cook a 500g packet of pasta. Meanwhile, whisk together juice 1 lemon, 1/3 cup each mayonnaise and plain yoghurt (I use lactose free). Drain oil from 425g can tuna into mixture. Whisk in. Then mix through the tuna chunks, 400g corn kernels (drained), 1 red capsicum (diced), parsley, 2 cups baby spinach, salt, pepper. Mix through drained pasta. Adults may like capers. Scoff. Makes enough for dinner and lunches for family of 4.

18.01.2022 Unbelievably delicious Christmas toasted muesli... oats, pepitas, sunflower seeds, shredded coconut, chopped pecans, cinnamon, mixed spice (plenty), orange zest. Mix in maple syrup, liquid coconut oil. Bake 180deg until golden, stirring every 10-15 minutes (takes 45-60mins). Cool then mix in currants and sultanas. SMELLS DIVINE. TASTES INCREDIBLE. #breakfast #muesli



15.01.2022 I'm having leftovers of this for lunch today. Haven't made it in yonks - forget how good it is! Chicken & brown rice salad 5-6 cups cooked brown rice... 600g poached chicken breast, sliced 1 carrot, peeled, grated 4 spring onions, finely sliced Handful green beans, sliced 410g can corn kernels, drained cup raw cashews, roughly chopped bunch parsley, roughly chopped cup apple cider vinegar cup extra virgin olive oil 1 tsp Dijon mustard 1-2 tbsp maple syrup Add all the salad ingredients into a large bowl. Whisk together the vinegar, oil, mustard and maple syrup. Drizzle over and stir through. Serves 2 adults & 3 kids. NOTE kids might like to have theirs served before you mix in the parsley.

11.01.2022 I know mushrooms are TRES CONTROVERSIAL. But theyre a big YES from me. And if youre also a fan, try this mushie salad.... Sliced button mushrooms Red capsicum (finely diced) 125g tin corn kernels... Spring onions (sliced) Gherkins (finely diced) Dill Combine 1/4 cup mayonnaise, juice 1/2 lemon, 1 tbsp apple cider vinegar. YUM!

11.01.2022 Dragging myself back into the year... takes a couple of weeks to get back into the kitchen properly. This week Im feeling the love, surrounded by awesome summer produce and enjoying watching the kids gobbling up dinners. This is a snap of last nights lamb pots with onion, eggplant, lentils, tomatoes, carrot, capsicum and peas. Topped with cheese and breadcrumbs then baked. Simple. Yum.

02.01.2022 The easiest and most delicious thing to do with salmon. Combine 1/3 cup miso, 2 tbsp mirin, 2 tbsp rice wine vinegar, 2 tsp grated ginger, 1 tsp sesame oil. Coat fish thickly. Marinade a half hour then grill 5-6 mins each side. Amazing with rice and salad for dinner. Fantastic cold in lunches. Completely great. Recipe from @bonappetitmag #salmon #healthyfood #yum
