09.01.2022 20 minute Christmas pudding in our pressure cooker. Oh yeah! CHRISTMAS PARTY BOOKING IDEA Pressure cooker Christmas pudding!! You need:... 1/2 kg mixed fruit 600ml iced coffee milk 2 cups of self raising flour 1 tsp baking powder 1) soak your fruit in the milk overnight or for as long as possible (in the MPC is perfect) 2) add two Cups of self raising flour and 1 tsp baking powder to the soaked fruit 3) cook for 16-19 minutes 4) run a spatula around the side to loosen and tip on to plate. Drizzle rum (optional) over the top and enjoy! Top tips: You may substitute the iced coffee for any juice, chocolate milk, plain milk and probably have a sneaky bit of alcohol It will look very wet still when it’s done, it is just the nature of the pudding Serve with custard Enjoy!
