24.01.2022 Recipe Baked Salmon Poke Bowl Carbs: 50.89g Protein: 37.45g Fat: 9.61g... Ingredients (marinade makes for 2 serves) FOR THE SALMON MARINADE 1/3 c. low-sodium soy sauce 1/3 c. extra-virgin olive oil 1/4 c. chili garlic or sweet chilli sauce Juice of 1 lime 2 tbsp. honey 1 clove garlic, minced 1 salmon fillet FOR THE BOWL 150gms cooked brown rice 1/4 avocado, sliced 1/2 cucumber, skin removed and sliced into rounds 1 medium carrot, grated 1/4 red onion, thinly sliced Coriander, torn Sesame seeds to garnish Siracha mayo for drizzling Directions * Preheat oven to 210 degrees and line a large baking sheet with foil. * In a medium bowl, whisk together soy sauce, olive oil, chili garlic sauce, lime juice, honey, and garlic. * Add salmon and gently toss to combine. Place on prepared baking sheet and bake until salmon is fork-tender, 15 to 20 minutes. * Cook rice and place into bowl. * Assemble bowls: Top with salmon, cucumbers, avocado, carrot, red onion, coriander, and sesame seeds. * Drizzle with siracha mayo and enjoy!

14.01.2022 RECIPE Eggs in Spicy Tomato Sauce Carbs: 20.3g Protein: 16.1g Fat: 11.1g... Ingredients (Serves 1) 2 Servings of Boiled Egg 10g Garlic 2g Jalapeno Peppers 10g Peppermint 50g Onions 0.25g Black Pepper 0.25g Salt 125g Crushed Tomatoes (Canned) Method: 1. In a non-stick fry pan with a tight-fitting lid, heat over medium heat. 2. Add onion and sauté for about 5 minutes. 3. Add garlic and jalapenos and sauté for 1 more minute. 4. Add crushed tomatoes, hot sauce and baby leaf. 5. Bring the mixture to a boil, then reduce the heat to keep it at a steady simmer. Simmer, uncovered, for 20 to 30 minutes, or until the sauce has thickened. Stir in mint. 6. Use a spoon or spatula to make four depressions in the sauce, spacing them evenly throughout the pan. 7. Gently crack an egg into each depression. Season the tops of the eggs with salt and pepper, then cover the pan and cook until the whites are set and the yolks are done to your liking. 8.
