17.01.2022 One of Sam’s goals for the year was to complete the Bowral Classic however COVID got in the way, but where there is a will there is a way. So Sam worked hard in the studio and on the bike and last weekend headed to Bowral to do his own race. Goal achieved. A barrier is built to be overcome. Great work Sam. Carbs: 19.2g Protein: 21.75g Fat: 2.08g Ingredients (Serves 10)... 100g Bamboo Shoots 50g Capsicum 200g Carrots 20g Chives 20g Coriander 200g Cucumber 20g Peppermint 1000g Prawns 10 Medium Rice Paper 40mL Sweet Chilli Sauce 100g Rice Noodles Method: 1. Blanch the bean shoots quickly in boiling water, then plunge them into ice cold water. Drain water. Soak the vermicelli noodles in boiling water for 2 mins, drain well. 2. Soak rice paper in warm water for 20 seconds and place a clean towel to absorb the excess moisture. Shred the mint and coriander leaves. 3. Place some noodles and bean shoots and a selection of other ingredients on a piece of rice paper and roll the rice paper just enough to cover the filling. Tuck in the ends, then place a piece of peeled prawn in the roll and continue rolling until roll runs out. 4. Dip in sweet chilli sauce.

09.01.2022 It looks like we still have a few cold and wet days ahead of us before summer really arrives so if you’re looking to warm up try this soup for lunch or dinner. Pumpkin Soup with Vegetables Carbs: 29.76g Protein: 2.67g Fat: 0.34g... Ingredients (Serves 5) 150g Carrots 150g Celery 3g Garlic 200g Sweet Potato 800g Butternut Pumpkin Method: 1. Chop all vegetables into cubes and put into a large pot. Cover with enough water so vegetables can boil leaving about an inch of water covering the top (check and add more water as needed but don’t over fill). 2. Cook for around 15 minutes and once the vegetables are soft drain some of the liquid into another and blend the vegetables with a hand held mixer and add a small amount of salt and cracked pepper. You can also transfer to a blender if you do not have a hand held mixer. 3. Add back the left-over water as needed (try and put it all back into the mix to avoid tipping good nutrients out). 4. Serve with a teaspoon of Greek yoghurt and chives or parsley if you want a creamier texture or enjoy on its own.

01.01.2022 Spring is here and salads are back! Try this Chicken & Kale Salad this weekend - spicy and jam packed with protein. Carbs: 14.4g Protein: 38.2g Fat: 6.8g Ingredients (Serves 1)... 1 Tsp Rice Bran Vegetable Oil 150g Chicken Breast Meat 1 Green Hot Chilli Peppers 5g Garlic 10g Kale 50g Mushrooms 50g Butternut Pumpkin Method: 1. Heat a large pan and spray with oil. Finely chop chilli and add to pan with crushed garlic and leave to soften. 2. Chop mushrooms and add to pan with diced pumpkin. Shred cooked chicken breast using fingers and then add to pan. 3. Stir thoroughly and add the kale mix together and then serve.
