Fat: 21.8g Ingredients (Serves 1) 125g Canned Crushed Tomatoes 1g Cinnamon 3g Garlic 1g Ginger 1g Coriander Lead 50g Lettuce 1g Cumin 100g Lean Beef Mince 1 Tsp Nutmeg 4 Corn Thins Soy & Linseed 25g Tomatoes Method: 1. Chop onion and garlic before adding to heated non stick pan to fry until brown. 2. Add mince and spices and cook for 5 7 minutes stirring continuously. 3. Add tomatoes to mixture then allow to cool. 4. Serve mince on corn thins along with lettuce and tomato.

18.01.2022 Recipe of the Week, Frozen Strawberry Yoghurt! Macros: Carbs: 10.7g Protein: 0.6g... Fat: 3.7g Ingredients (Serves 6): 150g Carnation Creamy Evaporated Milk 150g Strawberries 500g Strawberry No Added Sugar Yoghurt (Tamar Valley) Method: 1. Remove stalks from strawberries and chop in half. Lay strawberries onto a flat tray and then put in freeze for a couple of hours. 2. Using a food processor or high-speed blender, mix the yoghurt and evaporated milk and add strawberries pieces once they are frozen. 3. Pour mixture into a plastic container and wrap with cling film. Place in freezer overnight or until frozen. 4. Remove from freezer approx. 10 mins before wish to serve.

Protein: 21.75g Fat: 2.08g Ingredients (Serves 10) 100g Bamboo Shoots 50g Capsicum 200g Carrots 20g Chives 20g Coriander 200g Cucumber 20g Peppermint 1000g Prawns 10 Medium Rice Paper 40mL Sweet Chilli Sauce 100g Rice Noodles Method: 1. Blanch the bean shoots quickly in boiling water, then plunge them into ice cold water. Drain water. Soak the vermicelli noodles in boiling water for 2 mins, drain well. 2. Soak rice paper in warm water for 20 seconds and place a clean towel to absorb the excess moisture. Shred the mint and coriander leaves. 3. Place some noodles and bean shoots and a selection of other ingredients on a piece of rice paper and roll the rice paper just enough to cover the filling. Tuck in the ends, then place a piece of prawn in the roll and continue rolling until roll runs out. Dip in sweet chilli sauce.

07.01.2022 Recipe of the Week, Chicken & Vegetable Balls! Macros: Carbs: 20.8g Protein: 34.8g ... Fat: 11.8g Ingredients (Serves 2) 100g Broccoli 1 Cup of Chopped Carrots 100g Chicken Breast Meat 1 Medium Egg (Whole) 10g Almond Meal 3g Garlic 1g Ginger Method: 1. Crush garlic and ginger and then spread over chicken breast and grill or bake. 2. Chop other ingredients and add to a food processor (except almond meal). Once chicken is cooked add this to the mixture and blend for 20 seconds. 3. Sprinkle almond meal onto a flat surface and then take a handful of the mixture and roll it in a ball shape over the almond meal. 4. Once all balls are made bake in an oven pre heated to 180 degrees for approximately 7 to 10 minutes.

05.01.2022 Recipe of the Week, Chickpea and Sweet Potato Salad! Macros: Carbs: 40.3g Protein: 14.2g... Fats: 6.3g Ingredients (Serves 6): 100g Baby Spinach 300g Low Fat Natural Yoghurt 400g Chickpeas 5mL Lemon Juice 100g Spring onions 40g Parsley 400g Sweet Potato 50g Pumpkin Kernels 40mL Sweet Chilli Sauce Method: 1. Pre heat oven to 180 degrees then chop sweet potato into chunks before placing on a non-stick baking try and drizzling with sweet chilli sauce. 2. Bake for approx. 30 minutes or until caramelised, turning occasionally. Leave to cool once cooked. 3. In a bowl mix spring onions, spinach, pumpkin seeds and chickpeas then add the sweet potato. 4. Gently toss together then in a separate bowl whisk yoghurt, parsley and lemon juice together. 5. Drizzle dressing over the salad and serve. Can be eaten alone as a vegetarian meal or used as a side salad with freshly grilled fish or meat.

03.01.2022 Recipe of the Week, Spinach and Cheese Pie! Macros: Carbs: 12.2g Protein:10.3g... Fats: 5.3g Ingredients (Serves 8): 100g Low Fat Cottage Cheese 2 Large Egg Whites 1g Black Pepper 125g Feta Cheese 1g Nutmeg 20g Dried Whole Sesame Seeds 50g Mushrooms 0.5 tsp Olive Oil 300 Spinach 60g Onions 135g Filo Pastry Method: 1. Heat frying pan. Spray with non-stick oil. Add chopped onion and mushrooms, cook until onion is soft. 2. Blanch or steam spinach until just wilted. Squeeze out excess liquid. 3. Combine onion mixture, spinach, feta cheese, cottage cheese, eggs, nutmeg and pepper in a bowl. 4. Layer 4 sheets of filo pastry in 22cm round pie dish. 5. Spoon spinach mixture into pastry case. Top with remaining pastry. Roll edges to seal. Trim off any extra pastry. 6. Brush top of pie with egg white. Sprinkle with sesame seeds. 7. Bake at 180 degrees for 20 to 25 minutes or until golden brown.

Fat: 7.1g Ingredients (Serves 1) 150g Broccoli 100g Chicken Breast Meat 50g Rocket 2g Olive Oil 50g Ricotta Light 100g Zucchini Method: 1. Blanch broccoli and zucchini slices in boiling salted water. Drain well and set aside. 2. Heat wok or large frying pan and stir fry vegetables in oil for about 5 minutes, or until heated through. 3. Season with salt and pepper and remove to serving dish. 4. Add sliced chicken to the pan and toss to heat through. Remove from heat and keep warm. 5. Add ricotta to the pan and stir fry until hot and golden. This makes a delicious sauce for vegetables. 6. Serve hot ricotta and chicken on top of vegetables and with rocket.
