24.01.2022 Continuing my quest to eat a little healthier with this grilled salmon and soba noodles bowl. Also includes: steamed beans, roasted cauliflower, avocado, pickled ginger, seaweed flakes, bonito flakes and sesame Kewpie mayo. Very yummy@

24.01.2022 I got home late from work today, but luckily already had ingredients ready to whip up this amazing meal - spicy squid ink pasta with crab, basil and tomatoes. Made in 15 mins and absolutely delicious!

24.01.2022 So we had a little bit of the pulled beef from nacho night and decided to repurpose it for brunch. This is a pulled beef and beans omelette. Leftover loveliness

23.01.2022 A couple of weeks ago I found plantains at a grocer in Newtown. Today they finally ripened and I made this: Cajun fried fish with Cajun rice, fried plantains, fried okra and pineapple fritter with a simple lime-dressed salad. It was amazing! And my guinea pig dinner guests seemed to enjoy it too. Plantains are surprisingly easy to cook. Will definitely be having it again.

23.01.2022 Sujuk is a Turkish sausage and it is delicious! I found some at the supermarket, so this was today's brunch: a roll with sujuk, gooey fried egg, melted cheese, fried onion, rocket and ajvar (a Balkan capsicum spread).

22.01.2022 First day back in the office today, so this was all I could muster up for dinner. Simple spaghetti carbonara. Took 10 mins and totally hit the spot!

20.01.2022 Chicken, prawn and tofu laksa. Perfect dinner for this weather

18.01.2022 Dried tamarind fish and king prawn curry with rice, topped with coconut yoghurt and mint

18.01.2022 Prawn, potato and cauliflower tagine on a bed of minty couscous

17.01.2022 Cooked a Mexican feast for my birthday over the weekend, and it was very well received. Included: Minced beef nachos Pulled pork carnitas Lime & coriander chicken Potatoes bravas... Mexican rice Mango and apple slaw with a lime vinaigrette Salsa Guacamole Happy birthday to me

16.01.2022 Butter chicken with beetroot raita

16.01.2022 Thai red curry

13.01.2022 Another one of my 'do something with what's left in the fridge' meals. I had: a frozen fillet of fish, left over sweet chilli fish sauce, glass noodles, finger lime, raddichio, coriander and mint. Add wombok and beans. Then lightly batter and fry the fish, throw it all together and voila! This amazing dish. Which also only took about 15 mins to make (mainly because fish sauce was already done). Love when a plan comes together!

13.01.2022 There were beautiful fillets of tuna at the fish market this week, so I picked one up for a quick dinner. This is my remix of a nicoise salad: grilled tuna steak and asparagus, with olives and egg on a bed of lettuce. Drizzled with basil vinaigrette, made from my home grown basil. Look at me trying to be healthy!

12.01.2022 Squid ink pasta with squid rings and tomatoes. Super simple and super yummy!

11.01.2022 One tray dinners are the best. This was lemony roast chicken, potatoes and olives, sprinkled with parsley and lemon zest, served with a side of steamed and buttered beans.

10.01.2022 I had left over hokkein noodles and tofu from the weekend's laksa, both with a short shelf-life. So tonight's dinner was a very quick stir fry of hokkein noodles, pork belly, tofu, left over shiitakes (from another dish), wombok and corn. Love when leftovers come together!

10.01.2022 Perfectly cooked duck breast and vermicelli lettuce cups. This also had savoy cabbage, cherry tomatoes, spring onions, corn, fried onion, coriander, Thai basil and sweet and garlicky fish sauce dressing. Very satisfying!

09.01.2022 On my last trip to France, before the world went into chaos (so, in late 2019), I ordered beef tartare almost every time I saw it on the menu. Today, having volunteered to host Mother's Day dinner, I finally had a go at making my own. It was a hit! This was made with eye fillet, shallots, cornichons, capers, brandy, mustard, wousterchire sauce and of course an egg yolk. Topped with water cress and olive oil and served with crust bread. Definitely doing this one again!

08.01.2022 These little lovelies were my son's idea. We started off making mini quiches, but then he wanted to substitute the custard for a tomato base. So these are chorizzo, olive and feta puffs. We busted one open to test (of course!) and it was pretty delicious. He's pretty chuffed with himself, and school lunches are done for the week.

06.01.2022 Tried something a little different tonight: lightly battered and fried fish cubes with fried plantains on a bed of cauliflower rice with a side of steamed cabbage, beans and fennel salad.

06.01.2022 I finally got around to making nachos. This is pulled beef and beans, with homemade salsa and guacamole. So good and fun to eat!

06.01.2022 Creamy and lemony chicken and potato, with heaps of dill and spinach.

05.01.2022 Today we had plans for a Strathfield food tour, which would inevitably include Korean BBQ. But, coronavirus So we DIY - marinated BBQ duck and pork, BBQ king prawns, cheesy corn, japchae and home made kimchi (not by me). It was pretty close to the real thing

05.01.2022 Today was a bit of a baking day. My son has been a little obsessed with finding the perfect cookie recipe, and this, our 4th try, is the one. A brown butter chocolate chip cookie with Nutella inside, and a sprinkling of sea salt. They're a hit! Then we made these delicious pork sausage rolls, stuffed with celery, zucchinis and corn, which will be his school lunch for the week. Yummy start to the week!

02.01.2022 This time last year I was eating my way through Italy. This spaghetti vongole is a little nostalgia for all those amazing dishes I had during that trip. Pretty good for a first try - more wine next time, for sauce of course!
