24.01.2022 MILLET CONGEE Millet is an ancient grain with great health benefits that has been used in Chinese culinary and food therapy for thousands of years. Revered... as the King of Medicine, Sun Si Miao of the Tang dynasty reported that millet is salty and cooling in nature, nourishes Kidney Qi and removes Bone Bi (eg. bone problems such as arthritis). This supports current nutrition studies, where millet is one of the few grains that are alkaline in nature, which is excellent for those who suffer from acidic and inflammatory conditions. In addition, millet removes excess stomach heat, and helps with Xiao Ke syndrome (likened to diabetes in modern terms) and nosebleeds. Indeed, modern nutrition studies have shown that millet can support diabetes management as it is high in fibre and low in GI. Last but not least, congee is a classic breakfast dish in Asia. It is also recommended for when one is sick for when we are sick it is best to have warm and easily digestible foods. 22.01.2022 Purple Sweet Potato Balls Perfect snack for kids to take to school! In TCM, sweet potato is neutral in nature, tonifies deficiency and weakness, benefits energy.../strength, strengthens spleen-stomach and kidney yin. Purple-fleshed sweet potatoes are a great source of antioxidants, vitamins A, C, fibre and more. Anthocyanins give it it's purple colour, a powerful antioxidant with a wide range of health benefits. Traditionally sweet potatoes are often steamed. The GI index of sweet potatoes is lower when steamed compared to baked. Ingredients include purple sweet potato, maple syrup, coconut oil, almond milk and mint leaves to garnish. First steam the sweet potato til soft, peel the skin off, and mash it into a paste, add just a dash of almond milk, coconut oil and honey/maple syrup. You may also add some dessicated coconut to give it a bit more texture. Roll into balls and garnish with mint leaves. PS: Just a tip on finding purple-fleshed sweet potatoes, a confusion that many people have - the purple-fleshed sweet potatoes have white skin on the outside. The sweet potatoes with purple skin have white flesh inside. 16.01.2022 SPRING DIET Yesterday marked the spring equinox in Australia. Spring denotes a new beginning, of activity, young growth and spreading. All life are rising up ag...ain from winter hibernation, as can be seen in the shooting of buds of young plants, and felt in the spring breeze. This is the time to look after our liver and gallbladder, to cleanse the body of the accumulation of heavy foods in winter. A light diet that incorporates the ascending and expanding qualities of sweet and/or pungent tastes are in accordance with the nature of spring. This includes sprouts (of grains/legumes/seeds), other young vegetables (eg. young beets, carrots and radishes), and slightly pungent herbs (eg. basil, rosemary, dill etc). Salty and heavy foods are best reduced or avoided due to their sinking nature which can clog the liver and block it's function. Wake up early, spend more time in nature, and offer ourselves to meaningful causes. 11.01.2022 WHOLESOME VEGETARIAN BIBIMBAP A question people often ask is 'how do I get all the essential nutrients in a vegetarian diet?' One way is to ensure your diet con...tains a variety of fruits, vegetables, wholegrains and legumes (lentils, beans, nuts and seeds). Another great way is to ensure your meal is COLOURFUL (naturally ofcourse). As different colours in plants indicate different beneficial properties, a general guide is for a meal to contain the colours of all the five elements (eg. have something green, red/purple, yellow/orange, white, and brown/black). Look no further than the Bibimbap! It is one of my favourite meals as it's not only tasty but pretty much contains most of what the body needs. My version includes bean sprouts, carrots, zucchinis, spinach, shiitake mushrooms, sesame seeds, mixed brown and black rice, and topped with homemade gochujang sauce (see my previous post).
